A few weeks ago was the second installment of what I'm currently coining Desi Dinner Club! The theme was Midnight in Pondi, inspired by my trip to Pondicherry, a former French colony that still retains a little French quarter in the heart of the territory.⁣
⁣
The French didn't leave much of a mark on Indian cuisine, but this 5-course menu imagined what foods could have been if there was a bigger Franco-Indian overlap.⁣
⁣
6: Whipped paneer dressed with spicy cilantro and sweet tamarind chutney⁣
7: Rasam bisque with @bakery.four herbed boule, homemade cashew creme fraiche, and blistered mustard seeds
8: A chickpea panisse on top of a black tea infused, Amritsar style chole masala⁣
9: Homemade, savory macarons. Cookies flavored as tikka masala, saag paneer, and vindaloo. Filled with whipped paneer.⁣
10. A benne dosa filled with herbed mashed cauliflower and potato and served with caramelized french onion chutney⁣
