Easy lentil and spinch curry!

This vegetarian curry is one of those simple midweek meals that proves you don’t need loads of ingredients to make something delicious.

I’ve fried onion, chilli, ginger and garlic until fragrant, stirred through curry paste, then added tinned tomatoes, fresh spinach and a pouch of @tildarice Mixed Lentils for a hearty, protein-packed meal that’s ready in no time.

The lentils came in my @DegustaBoxUK box this month, and they’re such a handy cupboard staple for quick, fuss-free meals like this!

I served it with a warm naan but it's also perfect with rice or just as it is!

I’ve really enjoyed these @soreenhq Lunchbox Malt Loaves which I got in my @degustabox_uk this month.
They’re really tasty and great as a little snack or even as a quick brekkie on the run. They were lovely & squidgy and are made using real fruit. They also do these in different flavours too - Banana, Strawberry and Apple - which I’d love to try out too so will definitely be looking out for those! A great snack, convenient snack which is also a source of iron!

JACKET POTATO WITH TOMATO & RED PEPPER LENTILS

AD | A different topping to my usual - a nice change with a dollop of sour cream and a side salad.

Air Fryer Jacket Potato - Wash potatoes, pierce with a knife several times all over. Coat the skin well in olive oil and sea salt for a lovely crispy skin. Air fry, turning over half way. I do 190° for approx 35 minutes, but it will depend on the potato size.

@tildarice tomato & red pepper lentils - Included in this month's @degustabox_uk mixed with some sweetcorn.

Butter smothered inside and cheddar on top will make it extra nice.
