Terrine made with pig's face and bone marrow. Crispy pig's ear salad. Roasted pork belly with eggplant. "Poutine" with pork shoulder ragu and fried gnocchi. Wild boar tenderloin with garlic sprouts and celeriac. Mille-feuille made with pork fat and bacon chantilly.
