Rushed back to Lasita from SF when I got word @benshewry was coming in to eat tonight after his book talk @nowservingla . i’ve admired his work @atticamelbourne for so long, his work ethic and his dedication to sustainability have acted as things I strive for to become a great chef.

Extra special @chefroychoi graced us with his presence too. A fellow Angeleno who heavily shaped me as a young cook and who’s presence always reminds me to stay humble.

Both of these chefs who i’ve admired throughout my career said so many compliments about the food, space, and service tonight. One who i’ve gotten to feed for the last decade, and one for the first time ever. Both adding to the assurance that this is still the right path to be on.

I am so lucky and grateful to have such a sick ass team of talented and dedicated staff that work their butts off every day to execute the dream that @txeis_valencia , @supersteff , and I came up with. Appreciate you all!

SPROUTING CAULIFLOWER PALABOK

palabok sauce ~ eggs ~ chicken skin ~ crispy garlic ~ chives & lemon ~ backyard nasturtium

weekend special, but might be staying awhile!

An almost guilt free version of palabok, the now viral (if you’re non Filipino) pancit, thanks to @jollibeeus ! Our version replaces the noodles with beautiful sprouted cauliflower. No shellfish or pork, but with all the umami and richness of the OG. A new favorite! In all honesty, I used to want to gatekeep our precious pancit palabok for us Filipinos only, our own IYKYK, but it’s too good to not share and should be recognized by everyone everywhere! So here she is!

Happy Lunar New Year, y’all! The bond between Filipino and Chinese cultures is undeniable. Chinese influence runs deep in Filipino cuisine, from lumpia to pancit, and the list goes on and on. We’re incredibly grateful to have a home here in Chinatown, where we can continue to celebrate and share these rich traditions.

Last week’s @bonniesbrooklyn x @resy x lasita dinner was an absolute hit! It was such an honor to cook alongside @calvinhungry & his talented team in his Brooklyn kitchen. Serving lechon table-side and meeting so many of y’all made it an unforgettable experience. Big thanks to everyone who came out and made it so special! New York we love you!! 🐷 🍹
