Newly opened basque grill restaurant called “Sua” just opened its doors at Time Out Market and I urge you to give it a try.

The most recent establishment from chef Aitor Garate Berasaluze, who has received Michelin training, is called Sua, which means "fire" in Basque. It honors Spanish gastronomy with a variety of elegant wood-fired and coal-roasted dishes, paying homage to the coziness and warmth characteristic of Basque Country.

All meals are meant to be shared, however there is one dish that you might want to have all to yourself: the Angus steak sandwich. On grilled bread, it is stuffed with tenderloin slices, arugula, and house sauce.

Of course, you can’t leave Sua without having a dessert, the restaurant offers cheesecakes in the Basque way. This delectable dessert, which has a browned, caramelized surface and a creamy, custard-like middle. It’s all a must try.
