Din, Marrickville’s senior butcher with his favourite cut of meat - asado beef ribs. These are the ribs cut into thin strips across the bone, flanken style.

His favourite method of cooking these is twice cooked where he first simmers them in a broth of star anise, cinnamon sticks, cloves and bay then drains the broth (keeping the liquid for another use), cooking it again with robust sauces including oyster, soy and honey to caramelise. Bowl of rice mandatory of course 🍚 🥩 💫

A very unique moment in my career visiting some of the suppliers to where I work.

A huge eye opening experience by witnessing the hands and souls behind the regenerative agriculture and true sustainability. Obviously we all had loads of fun during the entire trip and hanging with some of the best crew I have had the privilege of standing side by side with.

A big thank you to @grasslandpoultry , @gundooee.getaways , and @farmerbrownshappyhens for taking the time out of their day to host us and showing such passion in their work and craft.

Of course this could never have happened without @featherandboneprovidore . A huge thank you and utmost gratitude for allowing me to come on board!

Can not wait to go back!
