A little different perspective this time around at the 2027 SCA Turkey National Roasting Championships ☕️

My first roasting competition as part of the organization, and such a nice one to start with.

A great host, the loveliest volunteers, and some seriously talented competitors showcasing their craft in the best possible way.

Turns out being behind the scenes is just as fun as being on the other side 👀

A lot of work, a lot of coffee, and a very good time. Would happily do it all over again. 💗

Sürpriz 🤗 İzne ayrılmama 1 ay var. Bir mola vermeden önce etkinliklerle dolu bir dönem geçiriyorum. Planlamaya, hayalini kurmaya, ilk adımlarını atmaya dahil olduğum işlerin gerçekleştiğini görmek büyük bir mutluluk. Bir süre gerçekleşen işleri uzaktan izleyeceğim. Yerinde duramayan ben, ayakları yere basan bir biçimde bir süreliğine durmam ve uzaklaşmam gerekeceğini biliyorum. Her şey kontrol altında olmadan rahat edemeyen yanım, emanet etmeye hazır 😌 Yanımda duran müthiş ekip bu süreçte yükümü sırtlanmaya gönüllü. The ‘Neuroscience of Flavour’ sounds like deep conversations and ‘aha’ moments - but the reality? Pipettes, precision, and occasionally tasting 15 different chemicals at varying concentrations, all BEFORE your morning coffee 🧪

The lab side of these workshops is where the real magic (and the heavy lifting) happens. Translating theory into practice means we’re not just brewing coffee; we’re preparing specific stimuli to mess with your brain. That requires a serious engine room. It’s nerdy, it’s intense, and honestly, it’s the fun part.

Huge credit to the team who made it happen:

- @buseergezer @busee_sarcan & @eda.tekozel Total machines. So fast and precise it was almost scary. ⚡️
- @dnztsdmr & @elif_bagci_unal For keeping logistics tight and jumping in as extra palates during the preparation madness. 👅
- @lsartajo For pipetting endless flavourings without losing her mind. 💧

Their work made it possible for participants to fully focus on those ‘click’ moments of perception.

I take the science bit seriously, but try not to take myself too seriously - and having a crew like this makes it easy. It was pure fun, a bit of a workout, and a good reminder that sensory science is a team sport. Grateful for this crew for making it all look effortless 🧠☕️🚀

Izmir was intense in the best way.

I recently had the pleasure of teaching an extended, merged version of my Neuroscience of Flavor workshops for the @birlikkahve community. Combining both modules into one intensive session allowed us to go deeper into the topic of sensory perception without breaking the flow.

The room was packed with coffee professionals - judges, trainers, and roasters. It wasn’t an easy crowd, but it was the best kind: curious, sharp, and willing to challenge everything. We dived deep into anatomy and physiology of tasting - how flavour is actually constructed - covering olfactory exercises, gustatory tests, and trigeminal sensations. Then explored crossmodal effects and how easily perception shifts depending on context.

It was one of those sessions where teaching turns into shared exploration. What stood out most was the quality of the collaborative inquiry; it was a day of re-calibration, occasional (and necessary) confusion, and many “click” moments. An attempt to explore the bridge between cognitive science and professional practice.

My sincere thanks to the teams at @nikaderofficial and @birlikkahve @elif_bagci_unal @dnztsdmr and @scaturkeyofficial for leading this initiative and creating space for this workshop. This kind of interdisciplinary work is where meaningful exchange happens. I’m already looking forward to the re-run ☕️

There’s something about judging Brewers Cup that always resets my perspective.

Last week in Izmir, at the 2026 SCA Türkiye Demleme Şampiyonası hosted at @scaturkeyofficial @coffeemanianexthub , I had the chance to sit on the judging panel again — and be reminded (once more) how wide this craft really is.

Three days of brewing, small decisions, quiet precision, and very personal interpretations of coffee. No two routines felt the same, yet all of them were anchored in intention. That’s what I keep coming back to with Brewers Cup — it’s less about “right or wrong” and more about clarity of thought.

You see competitors negotiating extraction, storytelling, and sensory expression in real time. And as a judge, your role is simple in theory, but never in practice: stay present, stay calibrated, and stay fair. It’s technical, but also very human.

Big respect to everyone who stepped on that stage — it takes more than good coffee to do that!

Thanks to everyone involved — competitors, organizers, volunteers, fellow judges — for making it happen.
