Had an excellent lunch and experience at EMi Madrid. Chef Rubén has created a wonderful team and it was a treat to get to experience the food and service. The pairing was off the charts. I had never experienced anything like that before with a pairing and it blew me away.

This upcoming weekend, I get to travel to Chicago to cook alongside some absolute legends, but most importantly, someone I consider a mentor and one of my very best friends @chefjohnshields.

I was lucky enough to work at Townhouse with John and Karen during their final year of service. At the time, I was obsessed with their blog, where they would share the new ideas they were developing. I was living in DC, having just returned from a stage in Europe, and somehow ended up six hours south of the city in Chilhowie, Virginia.

We instantly bonded over our shared obsession with New Spanish cuisine, especially the work of @andoniluisaduriz at @mugaritz. That experience stuck with me, and over the last 15 + years, I’ve been incredibly fortunate to spend time with John both in and outside of the kitchen, and to cook alongside him at my first restaurant Suna in 2013 and the incredible team at Smyth back in 2021.

John has had a profound influence on the way I think about food, restaurants, and cooking, and I’m incredibly grateful for his friendship and mentorship over the years.

I’m beyond honored to be a small part of celebrating ten years of one of the most important restaurants of our time.

Can’t wait to cook with everyone this weekend.

What a phenomenal trip! It's been a long while since we've traveled as a family, but it was well worth the effort and expense to get together. I hope we can pull another one together soon.

What a week.

Flew to Washington D.C. to cook at a Michelin-star restaurant for a collaboration dinner with @chefdannylledo from Xiquet and @vish_mayekar_ from Elem, and honestly… still pretty surreal.

Just really grateful to everyone who came out and shared the experience with us. Seeing a room full of people come together over food never gets old.

Big thank you to all the sponsors and everyone who helped make this happen behind the scenes. A lot of moving pieces went into this one and I’m thankful for all the support.

Moments like this remind me why I love what I do #chefslife

Last week, @chefdannylledo from the one-Michelin starred @xiquetdl in DC and Vancouver’s very own @vish_mayekar_ from Michelin-recommended @elemvancouver joined forces to bring us one decadent evening of delicious food, fabulous wines and wonderful company.

The multi-course, wine-paired dinner showcased Chef Danny’s impeccable cooking that’s deeply rooted in his Spanish heritage —yes, both his iconic paella and Iberico pork Wellington were on the menu, alongside Chef Vish contemporary takes on dishes inspired by his childhood and travels— he made a fancy version of the bhel puri he grew up eating and recreated his mom’s coconut curry to go with succulent scallop served on the shell.

Each course was thoughtfully staged and paired with elegant wines that made the evening even more special — pairing Paella and @krugchampagne will now be my new party trick, btw 🥘 🍾

The evening concluded with mignardises, more Krug and @badbunnypr dance party on the mezzanine.

Thanks for the warmest hospitality and for having me on this memorable evening, chefs 🫡

As a whisky fanatic, one of the reasons you travel to Japan is to taste as much Chichibu as possible!

Day 21 in Japan
Another classic in Chichibu is Bar Craic. Filled with special Chichibu bottlings, it's a very small space but perfect. The owner is really funny, and it has a great vibe. Tom from the SMWSA treated us to some incredible drams. Kanpai!
