As I sit here, reminiscing about my visit to the beautiful region of Calvados in Normandy, France, I can't help but feel an overwhelming sense of romance and nostalgia. The picturesque landscape, with rolling hills covered in lush greenery, apple orchards as far as the eye can see, and the scent of freshly pressed apple juice filling the air, was truly a sight to behold.
During my visit, I was lucky enough to learn about the amazing production process that goes into making Calvados. The magic of apples is truly on display here, as the best apples are hand-picked and selected for use in the production of this delicious brandy. In order to claim the name of Calvados, the brandy must strictly be produced in the department of Calvados within the Normandy region of France.
The region is divided into three sub-regions, each with its own appellation d'origine contrôlée (AOC) and set of rules that Calvados must follow in order to meet the requirements and bear the name. The AOC Calvados sub-region stretches across the majority of the Basse-Normandie region and accounts for about 70% of the total Calvados production. The AOC Calvados Pays d’Auge is widely recognized as producing the best Calvados of the three, with its soil dominated by clay and calcium carbonate. The AOC Calvados Domfrontais sub-region is relatively small, with a damper soil and more granite content.
As I eagerly anticipate my return to the region, I can't help but feel grateful for the opportunity to experience the beauty and magic of Calvados. If you're interested in learning more about this delicious brandy, be sure to check out the link in our bio for a great selection and a long write-up on what Calvados is and how it's produced.
There's something truly special about this region and the brandy it produces. The passion and dedication that goes into every bottle of Calvados is evident, and it's a true testament to the beauty and romance of this unique part of France. I can't wait to return and experience it all over again.

Knowing that Saturday, February 25th is the American Cider Association's Open That Cider Bottle day I stopped into Sage Bird Ciderworks (#thecompasscbf 2023 stop #19) to have one of their unique ciders to open that day. However, I walked out with two, the Ashmead's Kernel cider and Long Night Pommeau.

Did you know, that, beyond the water💧 used to wash our apples (which is recycled 25 times) NO 🚫 additional water is required for processing our apples into cider?

The Calvados AOC rules state that no artificial irrigation is allowed in the orchards so aside from washing our apples, cleaning the distillery, making coffee, and diluting the ABV of our spirit, we only need 1.2L of water to produce 1 x 70cl bottle of our delicious juice 🧃 which is at least 13 x less than the spirits industry average! 😱

Avallen is made with nothing but apples, water, and time - and by the way a lot less water than most spirit brands! Good for the planet and the pallet! 😋

Learn more about our production process in our “Blossom to Bottle” video available on our youtube channel.
