There is a tide in the affairs of men, Which, taken at the flood, leads on to fortune; Omitted, all the voyage of their life Is bound in shallows and n miseries.

Pot Pie Progress. As you may know, I went down to Sarasota and made a freezer full of pot pies for a client - and even developed a new flavor for them (a take on a classic British pairing). It feels more and more like the pot pies are going to make a comeback. Slowly but surely.

Stay Tuned…

Lemon Fettucini, Ramp Pesto and Burst Cherry Tomatoes. This is the first time I’ve hand made pasta since before the pandemic. But over the weekend a neighbor stopped by with a dozen farm fresh eggs. And then Monday a colleague handed me four bags of ramps as I came into the office. All of this is very typical of rural West Virginia. The obvious solution was to make this dish and serve it to the folks who made it possible. Oven roasted cherry tomatoes are a fantastic foil to creamy pastas. Their refreshing burst of sweet, acidic juices are like a palate cleanser - making the indulgent pesto seem like less of …. An indulgence.

To achieve this sauce, I put the pesto (one heaping tablespoon of pesto for each portion being prepared) into a small bowl and add a quarter cup of pasta cooking liquid. Stir stir stir. Now I have a nice, loose consistency to add to the pasta, which has been removed from its cooking liquid (with tongs or a spider) and placed in a pre-warmed skillet (burner off once you start combining the pasta and sauce). Toss toss toss. Add more pasta water to achieve the consistency you’re looking for. The magic comes from the heat of the water/pasta + starches in the cooking liquid + melting of the Parmesan in the pesto + richness of the finely ground pine nuts. This dish would also be incredible with diced asparagus and peas (garnished with mint leaves?)… or tossed with fresh, torn arugula.
