Great week in the @sodexousa test kitchen for an IDDSI focused Healhcare recipe development session!

There are a lot of moving parts when it comes to the standardized culinary world of healthcare. It takes a strong team of people ranging from dietitans, to the data & systems folks, to the chefs on both sides of the coin to make changes happen that improve the quality of our patients' lives.

I'm proud to be a part of such a talented team of people. It's always a bonus when we get to actually see each other in person, too.

Thank you to @chefjaggi and @dubrickjon for hosting (and feeding) us this week!

Stocks getting ready for our deliveries and community support next week.

For the seventh year in a row, Centerplate is preparing 250 turkeys to support Union Station Homeless Services’ Dinner in the Park, taking place from Nov. 19-20 in Pasadena, Calif. The Thanksgiving event feeds up to 1,000 people.
This year’s turkey prep will be led by Jon Dubrick, Centerplate’s new regional executive chef who oversees the creation of food offerings at the Pasadena Convention Center and Pasadena Civic Auditorium.

COVID-19 restrictions will impact the way the dinner is orchestrated this time around. Instead of hundreds of people gathering in the park, some dinners and dinner kits with all the fixings will be handed out in advance, while smaller, private dinners will be held on Thanksgiving day at multiple centers serving the homeless.

“It has been an honor for the Pasadena Convention Center and Centerplate to donate resources in order to help make Union Station Homeless Services Dinner in the Park a success,” Michael Ross, CEO of the Pasadena Center Operating Company said in a statement. “We are grateful for the services and meals they offer and are pleased to participate, for the seventh time, in such a giving cause especially during this difficult time.”

Received some news for my Covid Work......

How our chefs are making a difference in their local communities

Author: John Wright, Senior Vice President, Global Head of Food for SodexoWatch the video

I always take pride in recognizing and celebrating the work our chefs do all over the world, especially when they go above and beyond, using their skills outside of their day-to-day roles to make a difference to the lives of those around them.

2020 has been, as you all know, a year like no other so I want to take some time to recognise three chefs in the US who have taken extra steps to make a positive impact in their communities.

80,000 meals and counting

Jon Drubick is Centerplate’s regional executive chef for a Pasadena, California convention center. Jon and his team have long been active in the community, donating excess food to a charity that shelters families in need. Six times a year, Jon’s team creates a menu and prepares and serves a delicious three-course dinner for these families, including preparing and roasting 500 turkeys every Thanksgiving

When the convention center closed earlier this year due to Covid-19, Jon secured new business through the local government, offering services the community desperately needed. Seven days a week, the team prepares and packs two meals and a snack for Shelter in Place, a project that houses homeless people in local motels. To date, they’ve served nearly 11,000 meals. The team also helps area schools, providing 61,100 meals to children in need. The team has also supplied 5,000 meals to Shower in Place, which provides shower stations and a meal to the needy as well as a further 1,500 meals for Great Plates who provide meals for seniors. Each of these programs have complex logistics - determining meal quantities, sourcing ingredients, managing labor, packaging and more. Jon’s 31 years of operations experience makes it possible to overcome these challenges and aid people in his community.

As a chef myself, and I can cook meat. Tonight we picked up this Cote De Bouef from Oui Bakery on Melrose that was stellar. Perfectly seasoned, perfectly cooked and sent home togo. Let it rest for 20 minutes. One of the best steaks I have ever had. If you have the chance call them and find out when they are running the special again....and do it. YOU WILL NOT BE DISSAPOINTED. I will be talking this up for weeks...go check them out.

While serving the Great Plates Project in Pasadena we support reducing the need for new materials by recycling as much as possible.
