Chickpeas (Hummus) Patties with Cilantro & Avocado Sauce

Makes 8 medium patties (4 servings)

INGREDIENTS
1/2 cup rolled oats
2 teaspoons cumin
2 teaspoons chili powder
3 large cloves garlic
2 large scallions, green part only, roughly chopped
A small handful cilantro leaves and stems
1/2 large red bell pepper, roughly chopped
1-1/2 cups Chickpeas, cooked, rinsed and dried
(divide the chickpeas, 1 cup to mix in the processor and ½ cup to add whole)
1 large egg
Salt and pepper to taste
A few tablespoons of avocado or coconut oil as needed for cooking

1. Place the all the oats and spices in the food processor fitted with an “S” blade and pulse until turned into a coarse powder. Transfer to a mixing bowl and set aside.
2. Place the garlic, scallions, cilantro, bell pepper and half the chickpeas and pulse until well broken down but not pureed. Transfer to the bowl with the oats and add the egg and remaining chickpeas and season with salt and pepper.
3. Taste and adjust seasoning if necessary. The mixture will be moist. Allow the mixture to sit for 10 minutes in the fridge for the oats to absorb some of the moisture.
4. Heat a large non-stick sauté pan on medium heat and add a light coating of oil.
5. Form the burger mixture into 8 equal sized balls and flatten into patties about 3 inches across and 1 inch thick and drop into the pan as you go.
6. Cook until brown, and firm to the touch; about 4-5 minutes per side.
7. Serve as a patty on its own topped with avocado sauce or on a whole grain bun or lettuce “wrap” with picked onions and any of your favorite toppings.
