Butternut Soup with Cheesy Toastie
For these cold winter evenings

Ingredients:
1.2kg Butternut cubed
3 Garlic cloves
1 Medium brown onion
1 Tbsp chopped fresh ginger
3 Cups of Veggie Stock (I use @inapaarmanskitchen )

Spices:
1/2 Tsp Tumeric
1/2 Tsp Nutmeg
1/2 Tsp Dried Rosemary
1/2 Tsp Orange zest (or more if you like a stronger orange taste)

Toppings:
Banhoek Chilli Oil @banhoekchillioil

Optional:
You can make it creamy by adding 1/2 cup of heavy cream, just be sure to reduce stock from 3 cups down to 2 cups.

Served with a cheezy toastie on the side.

Instructions:

1. In a pot, add some oil and fry onion and garlic until translucent.

2. Add your fresh ginger and fry for 2 more minutes. Then add all your spices and fry for an additional 2 minutes.

3. Next, add your chopped butternut and on low heat. Fry it for 8 - 10 minutes, stirring occasionally until the edges start to soften.

4. Now add you stock, reduce the heat to low, and let it simmer for 15 minutes, or until the butternut is cooked through all the way.

5. Once the butternut is nice and soft, blend either using a stick blender (that's what I use) or a food processor until nice and smooth.

6. Now, all you have to do is just make some cheezy toasties to serve the soup with.

Top it off with some Banhoek chilli oil and enjoy! I used the garlic chilli oil.
