Hasselback your chicken by cutting shallow slits into your chicken breasts (don't cut all the way through!) and stuff each slit with bacon and a creamy spinach and artichoke filling. It will make your weeknight chicken dinner sing!
Have you tried this yet? Let us know how it went in the comments below!

YIELDS: 4 SERVINGS
PREP TIME: 0 HOURS 15 MINS
TOTAL TIME: 0 HOURS 50 MINS
INGREDIENTS
4 boneless skinless chicken breasts
Kosher salt
Freshly ground black pepper
4 oz. cream cheese, softened
1/2 c. frozen spinach, defrosted and drained
1/3 c. chopped artichoke hearts
1 c. shredded mozzarella, divided
Pinch crushed red pepper flakes
4 strips bacon, cut into 4 strips
2 tbsp. extra-virgin olive oil
DIRECTIONS
Preheat oven to 400°. Line a large baking sheet with foil. Make slits widthwise in chicken, being careful not to cut all the way through chicken. Season with salt and pepper. Place on prepared baking sheet.
In a medium bowl, combine cream cheese, spinach, artichokes, and ½ cup of mozzarella. Season with salt, pepper, and a pinch of red pepper flakes. Fill every other slit with cream cheese mixture and fill remaining slits with a piece of bacon. Sprinkle remaining ½ cup mozzarella on top and drizzle with oil.
Bake until chicken is cooked through and bacon is crispy, 35 minutes.

The branch financial secretary handing over 2 phones (Samsung & Techno) won by senior Sophie Onyenkpa & Comfort Momoh respectively after the raffle draw that was held at the April meeting. Kudos to the Branch Exco for this rewarding our members who have maintained their financial obligations ... Great Fegocolians are you aware that apart from the phones every member who’s financially up to date for the year is automatically qualified for a life assurance policy worth N2.1M courtesy of the welfare board... Also we urge our members to take advantage of the FEGOCOWOSA HMO and Life assurance packages? We believe every great Fegocolian “must” have access to quality and affordable health care..We will do a detailed presentation on the products shortly kindly keep a watch on this space #fegocowosa #fegocowosalagosbranch #usosa #prounitate #unityschool

#throwbackthursday it ws summer of 1976 a seed in the form of a young girl shinny like a black pearl with lots to offer life was planted in Fgc Warri all she dreamt of was to be A Voice for her ill society. Her name M. wait for it.she was a leader in anything she did, was 1. President Catholic body 2. Captain Girls Hockey and basketball team 3. School athlete, they said she was magnanimous and gracious both in victory and defeat. she was/is beauty and brains lucky her hubby. Oh she wasn’t left out in her education either for she left 🏫 with the best result in 81/83 A levels in Nigeria and went on to study law so she can be a Voice

Today the seed has germinated and blossomed like a 🌹 & is known as Bar Maureen Akpofure Awobokun. Through Integrity, hard work & dedication she has become, Head of litigation- E.I Kachikwu (Dr Ibe Kachikwu) & Co. Lagos. Principal Partner, Maureen Akpofure and Co. Main field -on commercial Law, specializing in Telecoms, oil & Gas. Retained counsel to ExxonMobil for over 15 years, Exco member NBA Jos and Ikeja & Asst National Publicity Secretary, NBA. Alas Bar Maureen is A VOICE that speaks the RULE OF LAW, TRUTH, EQUAL RIGHTS & SOCIAL JUSTICE and above all A VOICE for the VOICELESS as she always dreamt of in her days in the hostel.
We salute Senior Maureen for flying FEGOCOWOSA flag very high as an ambassador in every sphere she has ventured. Here in the annals of Fegocowosa Lagos she has left her footprints on the sands of time as one of the Pillars of our branch; she has been Chairman of the branch, currently a member of the board of trustees of the FEGOCOWOSA Lagos welfare board; an independent enterprise arm of the Lagos Branch that is breaking new frontiers, haven birthed the FEGOCOWOSA HMO & life assurance policy which provides affordable and quality health care services for branch members, support the elderly & young ones in the branch who don't have access to such service; They also organizes Employability and Masterclass program periodically to offer mentorship & opportunities to the Next Gen.
