This 15-course omakase is for those looking for their next special dining experience. Make sure to read each caption per slide. At @elyuomakase in Coral Gables, Chef Reiji Yoshizawa serves an omakase rooted in his Filipino-Japanese heritage and walks you through each course at the counter. Our favorite moment? Discovering Asin Tibuok, a rare “dinosaur egg salt” from the Philippines, still handmade by just a few families (swipe to see it). You’d never guess this oyster shell is edible. Yo no lo crei hasta que lo probe One of our favorite dishes of the night. A Filipino-style ceviche with coconut, Siberian caviar, and pickled Thai chili for a little kick, all served in an edible oyster shell. Some of the dishes we ate: • Kinilaw (Kumamoto Oyster) • Sake (Gazpacho) • Madai (Amazu) • Ukoy (Amaebi) Nigiri • Chutoro • Hotate • Otoro • ELYU Toast (Hokkaido Uni) • Kare-Kare (A5 Wagyu) • Leche Flan (Ube) Only a few families still make Asin Tibuok, or “dinosaur egg salt,” producing around 300 pieces a year through a six-month process. Closing with leche flan and ube ice cream, a combination I never knew I needed but now crave. One of Chef Reiji’s favorite dishes from growing up in the Philippines. 📍ELYU MIAMI 12 seats, a pristine counter, and possibly the most comfortable stools ever. Seriously, armrests! Chef Reiji Yoshizawa blends his Japanese heritage, his upbringing in Manila, and French technique in this interactive counter experience. The menu brings plenty of the luxury ingredients you’d expect from an experience like this. Caviar, uni, truffles. All lovely. But you know what really stood out to me? The Filipino elements. Those flavors became the stars of the experience for me. The ones that gave the menu personality and made it feel distinctly ELYU. My ultimate restaurant test is always how quickly I want to return.
