An ode to tortellini, the work horse of my weeknight dinners during this BUSY January. Specifically, Giovanni Rana 4-cheese tortellini, which you can crisp up, throw in soup, use as croutons in a salad (you heard me), or boil n’ toss with a simple sauce.

What is a pickle sandwich, besides delicious? It’s a really easy sandwich that will delight every pickle lover out there. I recently found this on @food52 inspired by @emmalaperruque ‘s recipe and instantly knew I had to #veganize it!

Recipe makes 2 sandwiches

4 slices of rye sandwich bread toasted
2 slices vegan mature cheddar
3 Tbsp (45g) Vegan Mayo
2 tsp (10g) grainy Mustard
1 small dill pickle finely chopped (about 30g)
2 medium Half Sour Pickles sliced thin lengthwise
1 large kosher Dill sliced thin lengthwise

Directions

1.mix together the chopped pickle with mayo and mustard and spread evenly on all four slices of toast
2.Top one side of toast with sliced pickles, alternating the half sours and dills.
3.Top with a slice of cheese, close sandwich and cut on a diagonal.

Just bc I was out of the country for Thanksgiving doesn’t mean I didn’t have the desire to still cook a proper, full holiday supper w all the trimmings upon return. 🦃 On Sat, w @kritterrrr in town for a bit, I wanted to welcome this current Londoner w a traditional Thanksgiving dinner. Plus, I truly *must* cook Thanksgiving dinner. Otherwise, 2023 wouldn’t feel complete. 😂

Did I spend hours planning & shopping for this 8-dish menu? ✍️ Yes. Did I take a total of 8.5 hours over 2 days in my studio apt w minimal counter space & an oven that can’t fit a standard half-sheet pan to prepare this meal? 🔪 Yes. Do I have any regrets? Absolutely not. I loved every second of the process! Enjoyed the prep as much as the supper itself. ☺️ EVERY. DISH. TURNED. OUT. FAAAAAN-TASTIC! 🕺🏻 Incidentally, while I had every intention to start cooking earlier (e.g., Noon for a 7 PM dinner), our sleeping schedules have been off. 🥱 Umm… so I def started making stuff ~3:30. 🕞 Dinner, as expected, was at 10:27. lolololol Glad this was just for the 2 of us bc guests prob would’ve told me to hit up DoorDash & call it a day.

btw, thx also to @kritterrrr for helping w some chopping, unintentional hand modeling (a.k.a. safely carrying piping hot dishes to the room w better p.m. lighting for photographic documentation 😂) & loading/unloading the dishwasher.

PUMPKIN SPICE CRUMB CAKE. 🍂 OK, let's keep it real, 80% of the reason we eat crumb cakes or coffee cakes is for the streusel. Here, the streusel isn't a measly topping practically being a tease... this is the *real deal.* Swipe & look at the ratio of cake to streusel! ➡️👀 I mean......!! 🥹 This tender cake has pumpkin & has spice -- vanilla, cinnamon, nutmeg, cloves & fresh ginger (!), to be exact. And ofc, a delectable, buttery, literally crumbly streusel. 🧈 Also... This cake looks just like that attractive, freshly-baked treat sitting under a cloche at your fav fancy cafe, right?!
