This Saturday! 2021 is a vintage that has had Piedmont lovers excited from the beginning. A long, relatively cool growing season allowed Nebbiolo to ripen slowly and evenly, building flavour and tannin while retaining the freshness and aromatic detail that make the variety so compelling. The result is a compelling combination: wines with the depth, structure and tannic backbone expected of a serious vintage, but without sacrificing perfume, energy or precision. There is plenty of fruit, yet the wines never feel heavy; the tannins are substantial but beautifully defined, giving them both impressive ageing potential and a sense of balance even in their youth. With these wines from the same year, this tasting is an opportunity to look closely at what makes 2021 so special — and why it is increasingly regarded as one of the benchmark Piedmont vintages of recent years. Finally you will receive a delicious glass of Franciacorta on arrival! See you there. TIX AT LINK IN BIO!

Tonight’s special wine pour is one that we are all loving! 2025 Utzinger Chardonnay Tamar Valley, Tasmania The estate series of our chardonnay that we pour by the glass. Incredible Tamar Valley fruit, grown on rich, ferrous topsoil containing large volumes of dolerite pebbles and sitting on heavy clay subsoil, which acts as a natural sponge for water and nutrients. The whole vineyard and winery are certified organic, and all the fruit is handpicked by winemakers Matthias & Lauren Utzinger. Their motto, wines are grown, not made. The estate is also a super biodiverse property, with 10% of the land set aside to preserve intact native grass and a further 15% planted with trees, understory and ground cover to support the native animals present. They care deeply about protecting the environment while producing the highest quality fruit. While we clearly love the white label chardonnay enough to offer it by the glass, the black label is special. The key difference between the two cuvées is the black label is fermented in 100% new French oak, and white label in seasoned French oak. Surprising flinty minerality and smoky bacon notes mingle with stonefruit, saline and the more classic citrus and oak aromatics. It’s definitely on the medium to fuller body end of the scale but has beautiful acid line and is incredibly well integrated. Enjoy it alongside our Pla Nung Manow! The high acid will cut through the richness of the seafood dishes, while the light floral notes will elevate the delicate flavours. See you tonight from 5pm

#Amaro | Amacardo Born on the slopes of Mount Etna, Amacardo is a young Sicilian amaro built around an ingredient that is anything but ordinary: the wild carciofino dell’Etna, a local variety of wild cardoon that has been part of Sicilian food culture for generations. Created by Sicilian entrepreneurs Maurizio and Andrea Belfiore, with the help of a local expert in wild botanicals, Amacardo was conceived as a way to capture the wild, aromatic character of the Etna landscape in a bottle. The range comes in two expressions. Black lets the wild carciofino take centre stage, supported by Etnean herbs for a distinctly green, earthy and pleasantly bitter profile. Red brings Sicilian red-orange peel into the mix, adding citrus, sweetness and a more aromatic character. A very different side of Sicily from the richer, more traditional amaros of the island: wilder, greener and unmistakably Etnean.

Meet Ebony, one of our core team members here at Bar Spontana, who’s been with us for almost 2 years. She’s now stepping into the role of Wine Buyer, and we couldn’t be happier to have her shaping what’s in your glass. Tonight Ebs has chosen the 2023 Domaine Arlaud ‘Roncevie’ Bourgogne Rouge from Burgundy France for our special wine pour 🫰 Three generations of Burgundian hospitality bring us this stunning Pinot Noir. Created in 1942 the family has slowly been acquiring more vineyards as it’s passed down through the generations. In 1966, the family acquired a 14th Century historical building in which to age their wines and this is what appears on their labels. This wine, known as ‘the secret gevrey’, was part of Gevrey Chambertin and was declassified to Bourgogne Rouge in 1964, when many borders around Burgundies wine regions were de-drawn. Giving us a Gevrey quality wine, at a much more accessible price point. The 2023 Pinot Noir captures the pure spirit of Burgundy with elegance and charm. Traditional fermentation in open vats, a slow gentle extraction with 15 to 20 days on skins, followed by ageing in oak barrels. Nothing fancy in the winemaking just pure tradition. Gives a well-balanced wine with fine tannins, fresh red fruit and a smooth finish. We’re serving it ever so slightly chilled on this drizzly spring of deception evening in Melbourne tonight. Highly recommending it along side our Gai Yang, charcoal chicken. The light tannins complement the umami-richness that develops as it’s cooked over the coals, but is light enough to now completely take over.

How lucky we are to be able to attend the trade wine tasting events like this one @altoadigewines last month. Alto Adige is one of the smallest wine regions in Italy with less than 1% of the total winegrowing area. It's influenced by the gorgeous Alps and Mediterranean. Excellent wines are made in all colours and from the international and local varieties. The colour of Lagrein 😍. Collage of labels for memories. @hopscotch_season #altoadige #südtirol #vinialtoadige #winetasting #sydney
