If you’ve had Kibbeh Nayeh, a popular Lebanese dish made of minced raw beef mixed with spices, herbs and bulgur, then you know it’s usually eaten with pita bread, raw onions, mint and garlic toum. But when I visited my chef friend @schererzach at @we.are.darkroom, he decided to turn it into a hand roll served with the creamiest (pocket) hummus in the game, @habizahummus 🔥

Safe to say @small_town_mayor and I ate about 3 of these back to back 😮‍💨 #hummus #rawmeat #kibbeh #handroll

Our next foodventure for OC Restaurant Week landed us at Chefs Zach Scherer and Drew Adams’ Chrysalis, a dining experience in the private room at Darkroom in Santa Ana. The seven courses on the tasting menu are plated right there in the dining room, Chef Zach explained the inspiration behind every dish and the specific artisanal wines paired with each course. This was an abbreviated menu of their seafood-centric tasting menu for $150, and unfortunately it is already sold out!

We indulged in everything below:
Fresh tofu, maple, roe, buckwheat, brown butter
🍷 Villiera Tradition Carte Rouge NV, South Africa

Kanpachi, very local citrus ponzu, flowers
Caviar, potato smoked trout, roasted cabbage
🍷Raoul Gautherin, Chablis 2022 Burgundy, France

Cod, chowder, oils, buckwheat
Tuna, olive, bleu cheese
🍷A Tribute to Grace, Grenache Rose 2023

Beef, smoked mushroom, spinach
🍷Derby Wine Estates, 2019 Syrah
