: PRINCE PAIRINGS: SCENES FROM A MUSIC AND FOOD TRIBUTE TO THE ARTIST IN DENMARK

“Nothing’s forbidden.”

That was Prince’s response when he learned the black rice his chefs had surprised him with was known as forbidden rice. He was careful with his words, and nothing could be negative. From then on, he wanted all his rice to be black rice. They served it for months.

Stories like that one are why Music Connection travelled to Copenhagen. The American magazine, founded in 1977, has just published a full report on the Prince tribute at Epicurus, four nights in which the Artist’s personal Paisley Park chefs, Ray and Juell Roberts, built a five-course tasting menu around his favourite dishes alongside Head Chef Xavier Fays.

Salmon from the Faroe Islands with black rice, one of his regular dinner requests, sourced from the same supplier Ray and Juell used at Paisley Park. Cocktails named “I Would Die 4 U” and “Sometimes It Snows in April”. A chocolate ganache cake topped with a miniature purple piano made from white chocolate and beetroot powder, a nod to his custom Yamaha and his final tour. And the espresso joke the sound engineers used to run: if Ray said three shots, it was going to be a long night.

Downstairs afterwards, Shelby J., a decade in Prince’s New Power Generation, delivered what the magazine calls a deliriously great set, wearing the silver Love Symbol charm he gave her, and closed by asking the room to spread love and be kind, because it does not cost a dollar.

Guests were welcomed at the door by Epicurus cofounder Sir Niels Lan Doky, who connected the house with Ray, Juell and Shelby through Mayte Garcia.

From Copenhagen to Music Connection 💜

So happy to share “Prince Pairings,” written by @michelebraphael with additional reporting by @ovlioxyvleuryon now published in @music_connection

Last month, I joined Michele at @epicurus_cph to experience a tribute to Prince through the music and food of those who knew him. We spoke with @therealshelbyj and Prince’s former Paisley Park chefs, @raymondrr4 and @juellruth about the memories behind the performances and the dishes with @xavier_fays

Getting to hear those stories firsthand made this trip especially meaningful. Thank you, Michele, for bringing me along and including my reporting in this piece. And thank you to @nielslandoky for sharing with us ✨

Thrilled to share scenes from an intimate Prince pairing at @epicurus_cph in @music_connection. Featuring longtime Prince collaborator @therealshelbyj and Prince’s personal chefs at Paisley Park @raymondrr4 and @juellruth, in collaboration with @epicurus_cph Head Chef @xavier_fays, the four-night special residency presented guests with a 5-course tasting menu of Prince’s favorite snacks and dishes and a rocking and reflective hour-plus Prince-inspired set by @therealshelbyj and band. Both gave guests a taste of the life, tastes and habits of the notoriously private music star.

Thank you to my editor @linalecaro for the assignment and her polish and to @ovlioxyvleuryon for his reporting talent—and being the perfect plus-one at this series in Denmark. Special thanks to @nielslandoky for his generous hospitality and for conceiving this Prince tribute with his wife, @maytejannell.

There is a Miles Davis painting hanging at Epicurus, the only one in Denmark. From 21 October, in that same house, the man Miles chose as his bassist at twenty-one will be playing.

Darryl Jones has spent more than thirty years holding one of the most coveted positions in music: bassist for The Rolling Stones. Before that he was already among the most sought-after players of his generation, with Miles Davis, Sting, Madonna, Peter Gabriel, Eric Clapton, BB King and Herbie Hancock behind him. Keith Richards puts it plainly: "Darryl is one of the best bass players in the world."

From 21 October to 7 November he comes to Copenhagen with pianist Robert Irving III, who was Miles Davis's musical director and helped shape his sound through the 1980s, and drummer Toby Williams. Between them they trace an extraordinary path, from the electric Miles years to the stadiums of the Stones, through reinterpretations of Miles, Sting, Madonna, the Rolling Stones and Darryl's own compositions.

And what lifts this beyond a concert: between pieces, Darryl tells his own story. The story of someone who did not study that music. He made it.

All of it downstairs at Epicurus, a former military gymnasium reborn with plush armchairs, acoustics by GamFratesi and a Bösendorfer 230 Vienna Concert waiting under low light. Because that is the idea of the house: culture and pleasure at the same altitude, and jazz programmed in long residencies rather than one-off gigs.

It is rare to hear the history of music told by someone who wrote it.

My wonderful wife treated me to a memorable evening at @epicurus_cph , where we had the pleasure of experiencing @therealshelbyj – the incredible singer who stood by Prince’s side for a decade and left her mark on his music.
As someone who has always admired Prince, this evening touched me deeply. A soulful performance, an exceptional band, and a fantastic celebration filled with music, joy, and infectious energy. Pure magic.
I’m truly grateful for this unforgettable experience. A heartfelt thank you to everyone who made the evening so special, and above all, to Julie, my amazing wife, for giving me a night I’ll cherish for a long time. ❤️🙏
