It took me two years to get this APRICOT TART just right. And it is just right.

It starts with an easy press-in cookie crust filled with a simple custard and sweet tart apricots.

Baking Tip: Taste your apricots before starting this recipe. If the apricots are good, then the tart won’t be good either.

There is something so deeply satisfying and comforting about a big casserole dish filled with gorgeous bubbly, cheesy, meaty lasagna. Set on the middle of the table or counter, with friends or family gathered around, it’s the perfect feast. This is Franca’s Lasagne from Mediterranea by @anastasia_miari for our July Feasting chapter challenge for our #rainydaybitescookbookclub. This was absolutely delicious!

This recipe includes both a bechamel and red meat sauce, which is my favorite combination. The bechamel adds a lovely creaminess to the lasagna, and balances the acidity of the tomatoes, in the sauce. I doubled the meat sauce so that I could freeze half, and have spaghetti another night. I’m definitely living in my era of work once and create two or more meals. The red meat sauce called for ground beef and I opted for a mix of ground beef and spicy Italian sausage. This is really all you could want in a lasagna with lots of meaty sauce, parm and gooey mozzarella, and fresh basil to brighten it up. We will definitely be making this again.

I can’t wait to see which recipes you made from the Feasting chapter of this book today. August, is our last month cooking from this book for our #yearofthedeepdive. Our final challenge is to make any recipe from the Treating chapter, pgs. 198-245 with posting dates of August 28 & 29. I hope you join us! #mediterranea #lasagnarecipe #italianrecipe

Did you know?… One of the many hats I wear: I’m a professional food photographer 📸🥗 For almost 15 years I’ve been shooting menus, recipes & cookbooks with some incredible chefs & clients who I feel fortunate to work with. I had a blast yesterday in Los Angeles working on the latest menu shoot with my clients at @bruxiewaffles alongside my dear friend, Restaurant Publicist Mona Shah @moxxe ❤️ Here’s a little behind-the-scenes peek at the real life of a food photographer, shooting real food, with real people!

One of the things I like about baking is figuring stuff out. Even for something as simple as this PEACH CRUMBLE I loved figuring out the right ratio of fruit to crumble topping and sugar to fruit so it’s sweet, but not too sweet.

One of the things that I figured out is that leaving the skins on the peaches creates more flavor and less work.
