I decided to test some old frozen vacuum sealed cascade hops from 2021 by making an APA last night. Threw some fresh centennial in there as insurance. The hops smelled very fresh out of the bag, so I'm optimistic. This won't be ready in time for comps, so the pressure is off until the new year and I can start experimenting again to use up keg/fridge space for a bit. #homebrewer #homebrew #beer #craftbeer #beersnob

#10959 Cruz Blanca Mexico Calling 10th Anniversary Lager Especial (USA)

Brewed for their recent 10th anniversary, this is their flagship beer that used a historic yeast from the original Cruz Blanca Cerveceria from a hundred years ago - all with the help of Siebel, Lallemand and Escarpment Labs (shout out Canada!). Coming in at 4.7%, it pours crystal clear with a foamy head and a bready nose, it’s crisp and clean with that signature Mexican Lager vibes, it’s so smooth and silky, crushable and balanced, wrapping in a dry, biscuity, corn finish. Glorious.

Brewed my first ever dark mild last night. I got to try out a bunch of new ingredients in the process including @whc_lab British Pub Ale yeast (a.k.a. "007"), @hogarthmalt ESB, and @makersmalt midnight malt. Looking forward to the (hopefully) delicious result in a month or so. #homebrewer #homebrew #canadabrews #beer #beeroclock

Our blue halfdrum veggies aka "Escarpment Gardens" are still going. Many hands helped tend these plants all summer. I have equally splendid colleagues, who yell things like "have you seen those cucumbers!?" while chomping on a fresh cuke (@daddyydeaa ) when they come in from lunch. And you know we like hot peppers.

The medals and prizes from @yeghomebrewersguild have arrived. Got my gold for the schwarzbier and silver for the hazy IPA. A big thanks to the club for hosting a great competition with very helpful and detailed feedback on the scorecards from all the judges. Even though I got absolutely destroyed on a couple of entries, it's a huge help when the judges are so specific about what needs to be fixed and even go as far as suggesting ways to improve subsequent batches of that beer. Another huge thanks to my home club @gtabrews for all of the ongoing support with these competitions. The drywall in my basement brewery is starting to get a bit heavy from all this hardware 😂. #homebrewer #homebrew #beer #beeroclock #canadabrews

I completely forgot to post this one. I brewed an updated version of my saison recently with some changes that I believe will make a huge difference in the long run. I switched up my late hop charge to amarillo instead of sorachi ace (thanks to @phaseshift.ferments for the helpful tip). Sorachi ace can be a very polarizing hop and has distinct flavors that may have actually been clashing with the other flavors in my previous recipe. I also adjusted the water chemistry significantly and took a lot of elements out that may have been contributing to a slight metallic off flavor. Other than that it's pretty much the same deal, but if all goes well, it'll be the best version of the recipe that I've ever made. Fingers crossed. #homebrewer #homebrewing #beer #beerstagram #craftbeer

We're in the middle of our next Homebrew order cycle so it was fitting to be able to join the @truegristhbc here in Guelph last week to catch up and enjoy beers at @royalcitybrew . @jermor97 from @kjurbanwinery also made it! There was good discussion, swag and @bnanzainsta even got out his older @escarpmentlabs tote he uses daily. Enjoy the new edition Jeffy B!

( Jeff is also famous around these parts for being Escarpment Labs first Homebrew customer. #homebrewlegend )

Back to brewing tiny batches last night with my blonde ale. Easy and fast brew session. Hit my OG as usual - should be a good one. #homebrewer #beer #beeroclock #homebrew #craftbeer

In collaboration with White Labs, Escarpment Laboratories and Lallemand, we present a new Dry strain with the focus on biotransformation. WLP079 Suava Ale Yeast is non-GMO and haze positive, has medium to high attenuation and low flocculation character, and can complete fermentation in 6-10 days depending on temperature.
