Okay this 10 year reflection trend was everything I needed. Reflecting on what was, to fully appreciate what is.
Wish I could’ve tagged everyone and wrote text on videos. Come on IG we can do better in 2026! But, shout out to our mannequin challenge and Danielle for showing me how Snapchat worked. I’ve still never used it myself, but we looked angelic💫

Okay 2016 I see you. I never intended to post anything, but used this challenge to go to down memory lane. There were so many moments I had forgotten about. So I decided to post after all. To easily reflect on these memories as reminders of how many life moments are happening when we’re looking ahead without appreciation of the current moments. Had to post these for myself! Reminder of a life being well lived🫶🏽

I wore a dress that wasn’t baggy thanks to @martika_avalon.
@itsaaronbernard and I got out of the house! Bonus: I wore lipstick💋.
Mom and I went to Ireland.
Coachella for the first time!
Had a see through shirt and ripped jean era.
Hawaii for the second time. (Not pictured my sliced open toe from jumping off a cliff from the southern most point in the US)
First and only boat wedding!
Crop tops and eyeliner at the Grove🤦🏽‍♀️.
Built furniture pieces for my first purchased home.
Annual Valentine’s Day Ladies Lunch.
Showed some skin for a friend’s women in power book.
Yoga in Walgreens 📸.
Beach concerts.
Hogwarts before I worked for Universal.
Learned you can fly private via memberships 🤷🏽‍♀️.
First time having @voodoodoughnut in Denver.
Sent mom off to an early retirement in Costa Rica.

Faith is define as a deep spiritual belief in things yet unseen , when we started out that was all we had to encourage us to, faith . Funny thing about faith though, with some steadfast work , mixed with some consistency , topped off with a sprinkle of sheer will and and I mean ANYTHING is possible !!

Mango slaw recipe with jalapeño, honey, lime, and green onion for a delightful twist!

Mango Slaw with Jalapeño Honey Lime Dressing

Ingredients:
- For the Slaw:
- 2 ripe mangoes, peeled, pitted, and julienned
- 2 cups green cabbage, shredded
- 1 cup red cabbage, shredded
- 1 bell pepper (red or yellow), thinly sliced
- 1 cup carrots, shredded
- 3 green onions, sliced
- Fresh cilantro, chopped (optional)

- For the Jalapeño Honey Lime Dressing:
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 1 jalapeño, finely chopped (adjust to taste)
- Salt and pepper to taste

👅 ADD TO ANYTHING! I served mine up with some jerk wings, rice and peas and plantains.

What you’ll need
2-4 4oz salmon fillet
2 - tbsp Olive oil

1/2 tsp Allspice
1 scotch bonnet (finely chopped)
If you don’t have use the two below ingredients
1/4 tsp Cayenne pepper
1/2 tsp Chili powder
1/4 tsp Cinnamon
1 pinch Sea salt/ pepper
3/4 brown sugar
1/2 tsp thyme
1 1/2 tsp Cumin
2 tbsp - butter

Directions:
Season both sides of the salmon with salt, pepper, jerk seasoning or spice you combined
Heat olive oil in a skillet on medium-high heat. Add salmon to skillet and cook on each side for about 4-6 minutes. Remove from heat when salmon is done to your likeness.

BONUS* after cooking salmon I removed from pan and add 1/2 tablespoons of butter and added sliced bell peppers and onions to give it mo flavor and veggies. *optional

What you’ll need for the Mango Salsa
2 - Mangoes
Juice of 1 lime
2 tbsp - cilantro
1 tbsp - Jalapeno peppers (I DID NOT HAVE JALAPEÑOS)
1 - medium red onion
Directions:
1. Peel and cut the mango into diced size pieces.
2. Chop onion into small diced size pieces
3. Finely chop jalapeno pepper (be sure to wash hands, utensils and cutting board after handling peppers).
4. Chop fresh cilantro.
5. Add all ingredients to a bowl. Add lime juice. Combine/mix all ingredients the keep in fridge until you’re ready to serve.
6. Enjoy!

Love the ‘idea’ of meal prepping on the weekend, but not sure how to hack it, especially when you’re low on energy and time?

I feel ya! As a busy vegan mom the pure thought of adding meal prepping & planning to my already full schedule used to make me nervous. Where do I start? What do I prep? Do I make everything in advance? Yikes 🥴

I spoke with @fallonlouise_ , Owner of @poppys_catering a while back who helped me reframe meal prepping in an easy way. With fall schedules kicking up, I thought it was the perfect time to revisit some of her tips. 🍂

Here’s 4 quick ways to meal plan when you’re tight on time. Visit my blog for more tips & tricks! (Link in bio & stories)🌱

1. Address your goal: Are you meal prepping to lose weight, make more plant-based meals, save time or money? Your why will help you decide which meals to cook for the week.

2. Make a list of your meals or recipes BEFORE you go to the store. (Even if it’s in the store parking lot~been there 😊): “If I don’t plan ahead I walk out of the store with $250 worth of groceries, (for me and my son), and still eat out! When I actually make a grocery list of staples that can be used a bunch of different ways, I spend about $50-75 less,” Fallon said.

3. Don’t make too many meals upfront: Keep it basic. “People don’t like repeating meals, or eating leftovers, but really that is key.” Pair 2 plant proteins with 4 veggie or carb sides & BAM, you’ve got a weekly meal plan! 💥

4. Stock your kitchen with meal-prep essentials like: celery, carrots, onions, bell peppers, veggie stock, brown rice & basic seasonings!
