A busy couple of days fermenting with @fermen_table - after a chance meeting @foodmuseumuk a few months back, we decided to do a skills swap. Wild yeasts and friendly bacteria were put to work in the making of rye and wheat sourdough breads, kimchi, milk and water kefir plus lots of pickles and ferments - delicious!!
We were so busy fermenting not many photos were taken of what we made - you’ll have to satisfied with these few I’m afraid!
We’re already planning our next meet up and maybe some future teaching collaborations…watch this space!

LOVED learning more about fermentation last night! ✨🥒🥕🌿

Thank you, Catalina @fermen_table , you do realise you’ll now have to share your knowledge with our @chantingstorkyoga yogis in the New Year!! 😉

So much fascinating science connecting our gut, brain and immune health. A lovely reminder as we head into winter: nourishing ourselves deserves a place on the to-do list too.

Ancient wisdom, modern science… and a few jars of fermenting vegetables. Right up my street! 💚

Have a beautiful day!

A new season starts here - welcome to September in Eddington. 🍂

Let’s give summer a proper send-off: catch the final @parkyogauk session and the last Sports in the Square of the year, closing out with squash in the square. Alongside that, there’s @douceuk flea market, a fermentation workshop @fermen_table , live music from Singing Allowed, and the Cambridge Ceilidh Club’s sixth outing.

And the big one: Open Cambridge lands mid-month. @storeysfieldcentre throws open its doors for a full-day Showcase of music, fitness, art and community - and separately, don’t miss a Bat Walk and Astronomy Evening under the stars. 🔭

Want the full picture? Explore the “What’s On” page on our website - link in bio, or swing by Storey’s Field Centre and local retailers for everything else happening this month.

Here’s to the last of summer, and the start of a new season at Eddington!

This event lets me unlock the full force of the weird and wacky wonders of food waste! Thank you, everyone who attended last Saturday. It’s a lot of fun creating these events with @fermen_table and seeing all the ideas come to life.
-
1. Potato skin poolish bread, cultured butter, rhubarb kimchi, cauliflower sauerkraut, courgette bread & butter pickles - @kenjcooks
2. Charred hispi cabbage stuffed with nori, preserved wild garlic, and black garlic garum, sauce made from the buttermilk from the cultured butter and fermented potato from the potato skins, finished with chive oil.
3. ‘Panzanella’ - @dethample tomato bombs, local heritage tomatoes, baby gem lettuce leaf emulsion, pickled red onions, grilled peaches glazed in vegetable trim treacle, sourdough discard crisps, and fig leaf ricotta.
4. Buckwheat & preserved lemon waffles, lemon curd, honey-fermented berries, almond & caramelised whey florentine - a byproduct of the ricotta.
-
But that’s not it for our Ferment & Feast events in @eddington_camb! 6th September, we have the incredible @kenjcooks joining us for a very special Ferment & Feast! Bookings are live over at @fermen_table website, and more details to come! See you there!

Christmas gets Santa; Easter gets the Easter Bunny; even Halloween gets numerous monsters. But what does Summer get? Zero-waste Holiday Sauerkraut, of course! What's he going on about?! We all know the pain of trying to use up all the scraps and leftovers in your fridge before going away on holiday for a week or two. Well, I have the perfect answer for those veg drawer hang-abouts. Chop up all the leftover vegetables (assuming their flavours will go well together), add some herbs or spices, 2% salt, and ferment on your kitchen counter for however long you are away! Simple. Easy. Want to know quite how simple? Join us this Saturday July 11th for Ferment & Feast!
-
(You can use any combination of vegetables, herbs, and spices. This is just what I had around)
- 1/2 cauliflower, leaves and all
- 1 carrot
- Small handful of breakfast radishes
- 2 spring onions
- 1/2 red chilli
- 2 garlic cloves, grated
- 1cm fresh ginger, grated
- 1/2 tsp ground turmeric
- 1/2 tsp ground cumin
- Small handful of herbs (parsley, tarragon, chervil, nasturtium, mint, anything kicking around)
- Salt

1. Roughly chop all the vegetables into bite-sized pieces.
2. Place a large bowl on the scales and zero them. Add all the chopped vegetables, garlic, ginger, spices, and herbs and make a note of the weight.
3. Add salt equal to 2% of the total weight.
For example:
500g vegetables = 10g salt
750g vegetables = 15g salt
4. Massage and squeeze everything together with clean hands for several minutes until the vegetables begin releasing liquid and softening slightly.
5. Pack the mixture tightly into a clean Kilner jar or fermentation jar, pressing it down firmly to remove air pockets. The vegetables should be submerged beneath the liquid.
5. If there is not enough natural liquid to fully cover the vegetables, top up with a 2% salt brine (20g salt per litre of water).
7. Seal the jar and leave it on your kitchen counter (ideally on a tray or plate to catch any overflowing liquid) for 2 weeks. If you want a stronger, more sour taste, leave it for longer.
8. Then store in the fridge and enjoy over the next year or so!
