Summer may be over, but our VIA Community Picks journey is not. 🍂🍷

This time, we’re heading to Piedmont: one of Italy’s most beautiful destinations for a fall trip.

Alba, Langhe, Barolo, Barbaresco, Roero and Canelli set the scene for wine bars, historic restaurants, autumn dishes, vineyard views, underground cellars and family-run wineries. 📍

Our Italian Wine Ambassadors and Experts shared 13 places to save for your next Piedmont escape, with Bagna Cauda, Roero Arneis, Barolo history, sparkling wines and native grapes along the way.

Save the carousel and read the full guide in the new blog post on @italianwinepodcast🎧

Controls create consistency. Consistency creates results.

The most successful restaurants don’t rely on luck, heroic effort, or hoping things go right. They rely on systems, checklists, accountability, and daily controls.

Food safety controls. Labor controls. Prep controls. Inventory controls.

When you control the process, you improve the outcome.

Success isn’t accidental. It’s operational.

Most restaurant owners focus on increasing sales.

But what if the biggest opportunity is controlling what you’re already spending?

A restaurant doing $2 million in annual sales can add thousands of dollars to its bottom line with just a 1% improvement in labor efficiency.

Better scheduling. Better planning. Better systems.

That’s exactly what the Restaurant Operating System course teaches.

Food Safety • Labor Control • BOH Efficiency

Self-paced training for only $99.

If your temp log is only for inspectors… it’s fan fiction.

A real log forces a decision before waste happens:
• catch drift early = cheap fix
• catch drift late = trash + re-prep + chaos

Food safety = time/temp control.
Ops bonus = fewer emergencies.

Abruzzo taught me that wine doesn’t have to perform.
It just has to belong—to a place, to people, to the table.
Mountains rise fast, the sea is never far, and vineyards climb higher than you’d expect. You taste it all in the wines: Montepulciano with lift, Cerasuolo made for the table, and whites like Trebbiano, Pecorino (and discoveries I loved, like Cococciola) that quietly steal the show.
Nothing flashy.
Just honest, family-focused wines built for food and conversation.
Some regions don’t need reinvention—just attention.
Grateful to @vinidabruzzo and @ieemusa for a soulful experience and incredible company. 🙏 🇮🇹 ❤️

✨ #TodayIDrinkWine is one week away — December 10th! ✨

I truly believe wine is fundamentally about connection.

Today I’m celebrating all the people wine has introduced me to and connected me with across the globe. What a special community. 💛
Scrolling through my camera roll reminded me just how lucky I am to be surrounded by such impressive, generous, wildly talented humans.

This industry is built on people, and I’m grateful for every one of you.

I hope everyone can take a moment next Wednesday to pop a cork, raise a glass, and enjoy some wine. 🍷
