Eric Hastings worked at Jean-Georges — a three-Michelin-star restaurant in New York City, one of the best in the country. Bon Appétit even followed him for a day on the line.

From wine lists to wood smoke.

Last August we filmed with @fiascobbq for On The Line with Bon Appétit, and owner Eric Hastings has patiently waited for this fun episode which is now out.

For the past couple of days I had the privilege of shadowing @bbqsnob around Austin and it was honestly such an eye-opening experience seeing what it really takes to evaluate a BBQ spot. His approach is pretty simple: show up unannounced, no heads-up, no special treatment. He wants to see these places as they truly are, not a curated performance of their best day. And it makes total sense. If you’re running a BBQ joint or any restaurant for that matter, your A-game shouldn’t be reserved for when someone’s watching.

Hanging out with Daniel also gave me a deeper appreciation for the craft of writing about food. As someone who comes at BBQ through a camera lens, I’ve always let the visuals do the talking, but watching Daniel work really shifted something for me. He doesn’t just eat; he reads the food. The way he breaks down flavor and texture goes way beyond “this is good” or “this needs work.” He finds the specific language that puts you right there in the bite. What struck me even more was how he digs into the story behind the food. Who is this pitmaster? What’s their background? What are they trying to say with this brisket or these ribs? The food becomes a window into a person. And he doesn’t sugarcoat it either. If something misses, he says so with honesty and respect. No fluff, no obligatory praise just because someone put in the work. That kind of integrity is what separates a real critic from a cheerleader and it’s something I’m taking back with me.

A big shoutout to Daniel Vaughn for letting me tag along on this one. And to @tuffystone and @underseasoned.bbqshow , thanks for letting me hang behind the scenes while you captured your video segment. This means a lot and I’m truly grateful. Let’s do that again.
