Who else is celebrating #AtHomeFiesta? So many memories are popping up, but one that stands out is prepping the Bongo-K-Bobs with the family and our Friday nights at @anightinoldsa. We may not be getting together this April, but I won't let that stop me from enjoying my ABSOLUTE MUST HAVE! 🤤
•
When we volunteer the weekend right before the festivities kick-off, all the meat is already marinated, and we are just doing assembling. I did a bit of digging and did find the coveted BONGO-K-BOB RECIPE from a 2013 @mysanantonio article. I'm trying it out for our Friday night, and we shall see if it has the signature NIOSA flavor. I may get a little wild and even do a NIOSA Preparada.🍓🍍
🔸
🔸
NIOSA's Bongo-K-Bobs -Makes 4 servings 🎊
🔸
🔸
🔹1 1/2 pounds well-trimmed beef sirloin, cut into 1 1/2"- cubes
🔹1-2 cups Italian salad dressing (purchased or homemade), or as needed to cover the meat
🔹1 teaspoon Hickory Liquid Smoke
🔹1 teaspoon fine ground cayenne or red pepper powder
🔹2 teaspoons salt
🔹1 tablespoon fine ground black pepper
🔹1 tablespoon garlic powder
🔹4 metal or bamboo skewers, or as needed (if using bamboo, soak them in water for at least 30 minutes to prevent them from burning)
🔹1 large or 2 small green bell peppers, stemmed, seeded and cut into 1 1/2"-inch pieces
1 large onion, peeled, broken into layers, and cut into 1 1/2"- pieces.
🔸
🔸
This recipe can easily be doubled, which is what I intend to do. For the full @mysanantonio recipe, be sure to click the link in my Bio. ⤴ Stay safe, stay healthy, and let me know what Fiesta recipes you're trying out. 🎉

Here it is: Teej’s Chicken on a Stick recipe.
Tag us if you use it!
Play around with the seasonings to suit your taste!
Serves 2
Take 1 large chicken breast and butterfly into two pieces. Pound down pieces into roughly 1/4 inch thick.
Brine chicken in enough buttermilk to cover in a bowl or Ziploc bag. Add 1 tablespoon salt and let brine for 4 hours or over night. Alternatively pickle juice can also be used as brine.
Heat oil in Dutch oven, cast-iron skillet or other high-walled pan to 300 degrees.
Make a flour dredge mixture using 1 cup flour, 1/2 tablespoon garlic powder, 1/2 tbsp onion powder, 1/2 tbsp paprika, 1 teaspoon cumin, 1 teaspoon freshly ground black pepper. (Add cayenne for a spicier rendition.) Stir to combine.
Beat 2 eggs until well incorporated.
Take chicken breast from buttermilk and dredge in flour, then dip into egg, making sure entire breast is coated in egg. Dip back into flour mixture.
Slowly drop breast away from you into Dutch oven filled with vegetable or canola oil to 300 degrees.
Fry for 3 to 5 minutes flipping halfway through or until Instant read thermometer measures 165 degrees.
Remove from oil and let drain on wire rack lined with paper towels. Skewer with wooden or metal skewer. Top with jalapeño, because of course. Enjoy + VIVA FIESTA!

💥Double tap if you have someone in your life who supports you 1000% 👏🏽 -

My hubby @pedroolivarez3 has been there for each and every single growing pain SBG & H+S has had. And never stops supporting. 📲
-

Even through virtual social media campaigns is he still being his amazing self - bouncing off ideas with me, cooking all of the Fiesta speciality foods, & for assuring me the #AtHomeFiesta campaign will be successful when I pivoted ridiculously fast from 10-months of hard work and felt nervous doing so. -
I’m so blessed to have him in my life! -
Here’s to you, boo! Thanks for being the unofficial Creative Director for team SBG! 🦋📲💻

Yesterday we surprised the Parentals with the smallest drive by #Fiesta parade we could get together. My Sister Rebecca had an #HEB theme and we were a marching band. I think they enjoyed it. That's me yelling "go Spurs go" and "chow me your choes".
I miss hugging them. ❤ #SwipeLeft
