Grilled Chicken Parm

Flattened out chicken breasts to about 1/4 inch thick. Seasoned with salt, pepper, garlic, oregano and olive oil then fired up the grill. Grilled for about 3 1/2 min per side. Topped with marinara sauce and fresh mozzarella. Closed the grill lid and cooked until reaching 162°F to allow for carryover to 165°F. Simple and Delicious!

Fajitas 🌮

Marinated a “Steak of the Month Club” Flank Steak from the @the_butchers_markets with orange and lime juice, garlic, cumin, ground coriander, onion powder and Chipotle Pepper for about 5 hours. Let it warm up for about 30 min while the coals were lit and the grill came to temp. Placed direct on a smoking hot cast iron skillet until the internal temp reached 125°F, flipping as needed. Rested the steak while the peppers & onions cooked. Sliced and built fajitas. Delicious! 🌮

💨🐓Smoked some yard birds on the Weber Kettle yesterday… Marinated the chicken halves in some George’s Sauce, which is an Eastern NC style bbq sauce, for 2 hrs. Then dusted them with my 2 favorite rubs/seasonings Fire & Smoke Second City and Dat’l Hook Ya’s Blackened Seasoning. Smoked for a few hours low and slow with a mix of hickory and apple woods. Turned out killer as always, juicy with the perfect blend of sweet and heat.

Fun fact; Fire & Smoke and Hook Ya are both out of St.Augustine, FL

Reverse seared Bone-in Ribeye

Dry brined a “Steak of the Month Club” Bone-in Ribeye from the @the_butchers_markets overnight with kosher salt. Seasoned with Shiitake Steak Rub then let sit out to warm up while the coals were lit and the grill came to temp. Placed indirect until the internal temp reached 115°F, flipping at 80°F to promote even cooking. Seared direct 1 min per side, twice for a total of 4 minutes pulling at around 130°F. Topped with a Whiskey Pepper compound butter for even more flavor then rested a few minutes before slicing. Delicious!
