Autumn has officially arrived in France. The weather is slowly cooling down, and we’re now letting the truffles ripen for a few more weeks.

The tail end of truffle season.

The last of this year’s Flinders truffles have made their way through the kitchen here. Earthy, fragrant and one of those ingredients that really doesn’t need much fuss.

Grown just down the road, here on the Peninsula.

A short season, a small window, and all the more special for it.

It might be surprising, but truffle growers aren’t on holiday yet.

Even though the season is over, the next few weeks, just before spring, are actually decisive for the next harvests.

3 reasons why:
1 - Soil work: keeping the ground soft and aerated before the new truffles start to develop, while encouraging a healthy root system.

2- Tree pruning: controlling the canopy to manage the balance of sun and shade.

3- Inoculation: hoping for the magic to happen in the seasons to come.

Growing truffles is definitely not just about harvesting them. The work for the next season starts long before the first truffle is found.

So, before heading back to France, I want to wish good luck to all my Australian truffle-growing friends for the weeks ahead! 🇦🇺

Sad to see this dish leave the menu soon. It’s been our fish course for the past few weeks and definitely one I’ll miss.

Aquna Murray cod with scallop and truffle mousse, Madagascan vanilla braised pumpkin from our farm, confit lemon, and a beurre blanc split with shellfish oil.

A really simple combination of some beautiful ingredients. 🐠 🖤 🎃

Orson turns One.

Friday night was a pretty special milestone.

Thank you to everyone who came and celebrated our first birthday with us and to all of the friends, producers, suppliers, winemakers, growers, chefs, guests and familiar faces who have been part of Orson over the past 12 months.

Opening a little restaurant and watching it find its place in the community has been quite the ride, and we’re incredibly grateful for the people who have backed us, supported us, eaten with us, poured a glass with us and continued to walk through our door.

To our team, thank you for being part of the story.

And to our friends who joined us in the kitchen and around the restaurant on Friday night, thank you for making the night feel so very Orson.

One year down. Plenty more to come.

Come with me for a relaxing afternoon at the truffle farm gate 🍄🤍 Save this spot for your next winter adventure on the Mornington Peninsula.

We spent the afternoon enjoying delicious truffle toasties, a warm bowl of soup and the peaceful farm surroundings with our dogs while the rest of our family went for truffles hunting. 🐶🍄

Of course, we had to try the truffle choc top ice cream before we left🍦and brought home some fresh truffles to enjoy later too.

Such a lovely way to spend a winter afternoon on the Mornington Peninsula 🤍
