Making the viral Chilli Oil Carbonara Pasta🍝

Lagi bermunculan terus recipe ini di IG, so let’s give it a try!
Chilli Oil pegang peranan penting di resep ini, so pake Chilli Oil yg enakkk! Aku pake @changsrecipe yang Crispy Garlic Chilli Oil. Honestly my current favorite Chilli Oil. Literally bisa makan apa aja pake Chang’s 🙈

Aku pake spaghetti gluten free merk San Remo (beli di supermaket).

I came across this chili oil carbonara reel from

@foldandflour

and was super intrigued. Not only did it look bomb it’s basically vegetarian. Now I ain’t scared of no beef (or pork) but I do have like 2 or 3 vegetarian friends that can benefit from this so I busted out my @eatbingbaby chili oil to try it and boyyyyyyyy. This spaghetti was a major hit.

8/10 香! 🤭 Forgot to add salt to the water while cooking pasta but you don't really need it I felt, just added more chili oil and it was Delizioso 🥰

And no eggy smell as you'd imagine my friend, the food science here blew my mind🤯

Yep, I shouldn’t have posted this chili carbonara… and now you’ll make it tonight 🍴

My husband requested it, I whipped it up after watching @foldandflour in just 20 min, and it was on the table 😎

Short video = easy recipe. If I can make it fast, you can too.

For 2 people:
• ~180g pasta (I used De Cecco)
• 2 egg yolks + 1 whole egg
• Grated Parm
• 3 thinly sliced garlic cloves (or more 🤪)
• 1 tsp chili oil (more if you dare)

Quick steps:
1. Reserve pasta water
2. Whisk eggs + Parm into thick paste
3. Boil pasta. Fry garlic in oil, add chili oil
4. Add 1 ladle pasta water, low heat until thickened
5. Toss pasta in pan until coated. Season with salt, pepper, more chili oil
6. Add choice of protein and bam!

🔥 Short, spicy, and you’ll make this tonight.

Oh yeah, baked or frozen cookie dough available all week in case you’re wondering haha! 😂

Carbonara using up leftover roast chicken.

I’m working my way through all my saved recipes and this is a bit of a butchered version of the carbonara by @foldandflour

Next time I’d add more @san_elk stock because of how much water I ended up using and I would have used Parmesan if I’d had any!

CHILLI OIL CARBONARA

I reposted this as a trial earlier this week and once again it blew up! I think this repost deserves a place on the grid.

A throwback to my first viral recipe! I made this pasta after a long day at work, we had nothing in the fridge apart from a few ingredients and I decided to make my own version of a carbonara. I wasn’t even going to post it but decided to, and over the next few days this went crazy!! I had no idea people would love it this much

I have loved how many people have recreated this and it’s become part of their weekly rotation. It’s such a simple dish packed with so much flavour! Thank you for all the love & all the hate too 😉

For 2 people
Pasta of choice (usually 80g per person of dried/uncooked pasta)
2 egg yolks
1 whole egg
150-200g of grated Parmesan (add more if you feel like it needs it)
3 thinly sliced garlic cloves
2 spring onions
1tsp of your choice of chilli oil (start with 1 and add if you feel like you need more)

Ensure to reserve pasta water
Not in the video but you can also add a tsp of white miso paste into the egg and Parmesan mix

Whisk the eggs and Parmesan together until it’s a thick paste. Leave aside

Put your pasta on boil. In a separate pan with some oil fry off your garlic and spring onions for 2mins. Add in your chilli oil. Start off with a small amount of chilli oil and then you can always add more if desired

Add 1 or 2 ladles of pasta water and turn the heat on low, the oil and water should thicken. Whack in your cooked spaghetti and toss in the oil until fully coated.

Similar to a carbonara, add a tablespoon or 2 of the pasta water into the egg mix to temper the eggs. Ensure the pasta is heated through and either turn off the heat completely or have on a very low heat before adding in the egg mix. Thoroughly mix in the egg mix through the pasta and add some pasta water to loosen it up
Keep adjusting until your desired consistency.

Season with salt, pepper and more chilli oil if you like video Courtesy of @foldandflour
