Gathered in Fermentation | Collaborator Spotlight: Chef Colin Uyeda (Folke) Behind every dish at @folkerestaurant lies seventeen years of dedication to culinary discipline, deep technique, and an uncompromising respect for the land. Chef Colin Uyeda began his culinary journey at nineteen, building a foundation at acclaimed international kitchens—from the renowned 3 Hat awarded Marque in Australia to prestigious stages at 1-Michelin-Star Relae and Studio in Copenhagen. During his tenure as Chef de Cuisine at Pilgrimme on Galiano Island, the restaurant earned the #3 spot on enRoute’s Best New Restaurants in Canada. Later, in Tokyo, he immersed himself in the precision of the 3-Michelin-star Nihonryori RyuGin under Chef Seiji Yamamoto. Upon returning to Vancouver, Colin served as Chef de Cuisine at Kissa Tanto, consistently recognized among Canada’s 100 Best Restaurants. It was here that his deep connections with local farmers and suppliers inspired a pivotal shift: applying decades of rigorous technique solely to plant-based ingredients, giving vegetables the exact same reverence traditionally reserved for fine meats and seafood. That philosophy became the foundation for Folke—Colin’s homage to local growers, seasonal harvests, and sustainable hospitality. On September 23, Chef Colin joins at COFU Chinatown for Gathered in Fermentation, bringing his singular perspective on autumn produce and plant-based craftsmanship to our seven-course collaborative menu.
