A closer look at ANIMA unchained × ZWIESEL FORTESSA in Wirsberg.

We came from different corners of hospitality, each with our own perspective. Around the table, we found plenty in common: curiosity about what was being served, conversations sparked by each course and a love of creating experiences worth sharing.

Our glassware, porcelain and cutlery became part of that exchange — held, passed, enjoyed and discovered together.

At ANIMA unchained × ZWIESEL FORTESSA, friends from the ZWIESEL FORTESSA and @aura_anima_by_ahtb communities came together in Wirsberg, bringing an appetite for discovery and a shared love of gathering around the table.

@alexander_herrmann_offiziell, @tobias_baetz_offiziell and their incredible team brought their imagination to life through ANIMA unchained. Our glassware, porcelain and cutlery became part of the experience — in every pour, every course and the moments shared in between.

One of the posts I see first thing almost every morning is from @poterie_et_porcelaine with an always beautiful plating of the thing I need to try next!
A few days ago, it was the Kimchi-Tomato Soup with Rice & a Soft Egg from Something from Nothing @alisoneroman that peaked my interest.

First, the recipe says it’s perfect for using all of my “ugly tomatoes” - the end of the season gems that are bruised, maybe a little soft, but still so full of flavor and sunshine.
Sauté these in increments with onion, garlic slivers, and chopped fresh ginger. Add in a jar of kimchi, tamari, fish sauce (the good kind @redboatfishsauce - it makes a world of difference), and water.
When it all comes to a boil, add in well-rinsed rice. After 20ish minutes, when the rice is tender and all of those flavors are loving on each other, season to taste with SnP, maybe more sauces and a pat of butter.

It’s a fresh, bright, eyebrow-raising take on a wonderfully different tomato soup. I adore the textures and the heat. Take the time to make some soft eggs. Garnish with scallions. Praise those ugly tomatoes.
