Where mountains meet desert. A Michelin Colorado restaurant redefining Southwestern cuisine through the culture, people, and flavors of the 4 Corners.

POSTS STORIES REELS TAGGED

You ever have a dish that keeps you up at night? Not because it’s wrong but because you know there’s something more there. That excitement of revisiting it. Changing one little thing. Chasing that moment when everything finally clicks. Man, it’s a beautiful thing to still be this excited about cooking.

Just us out here in Southern Colorado, telling our story. 4️⃣

A guest walked by our kitchen last night, looked inside and said, “Wow, it’s just like The Bear.” I had to laugh. 😂

Saturday night service at Four. Controlled chaos, constant communication, a little pressure, and a team of people who genuinely love what they do. The difference between what you see in the dining room and what it takes to make it happen behind the scenes is pretty incredible. Welcome to our Saturday nights. Took 10 years to get to this level of calm. 🔥

As we get into new menus, there is a lot of trial and error. Having tools to give the team on release days makes a huge difference.

Find out what works, what does, what makes sense, what needs adjustments, and so much more. Its also important to get the teams input as they run their stations.

My favorite part is getting what was once a thought in our heads into a physical form on a plate. We think life into everything we do.

We spend so much time teaching cooks what to do with ingredients once they reach the kitchen. But how much time do we spend teaching them what it took to get there? The soil, the weather, the patience, the work. These tomatoes came from my garden in the middle of October and are headed to the restaurant. If you want beautiful garnishes, don’t be afraid to grow them. I want our cooks to understand that great cooking starts long before we pick up a knife. Respect the ingredient, the process, most importantly the people who grow our food.

The Meadow | A Season in Transition

There’s a moment in The Rockies when the landscape begins to change. The greens fade, the leaves fall, and the first signs of winter settle in. We wanted to capture that moment on a plate. Not just the colors of fall, but the feeling of a season letting go. At Four, we’re challenging ourselves to cook what we see in the landscape around us. To tell stories through ingredients, textures, and the changing seasons. This is our interpretation of that transition.

There’s a shift happening in our restaurant right now, and it’s hard to explain unless you’re part of it. Open conversations. Contagious curiosity. A deeper level of intention behind everything we do. I’ve spent years chasing recognition, navigating failures, rebuilding businesses, and learning what actually matters. The recent Michelin recognition is special, but it doesn’t define the nearly decade of work behind this restaurant. This week, Chef Ashley and I sat alongside some of the best chefs in Colorado for lunch. We both walked away realizing how much more room we have to grow. Our motto this year is simple. No outside noise. Less chasing recognition. More protecting our ingredients, telling the stories of our farmers, and challenging each other to become better cooks. For the first time in a long time, I’m less concerned about where we’re going and more excited about what we’re becoming.

Farming is isolating. You spend your days alone in a field loving these plants. You harvest and process and pack and repeat every day. And it can feel so lonely. It feels, on many days, that you aren't seen. And then a phone call changes all that. Suddenly you're in a kitchen with people showing what they've made with the produce you've labored over and loved for months. Thank you @fourbyluck for making me feel seen. I look forward to seeing everything you make in the new year.

This year at Four by Brother Luck, we’re going deeper. Closer to our farmers. More protective of the ingredients. Deeper connection to the landscape. Intentionality about the people and artists we collaborate with. Food. People. Place. Purpose. Before a dish reaches the menu, we’re asking one question:

What story are we trying to tell?

October is Agrumato Month and we’re celebrating with 24 chefs and restaurants across the country who are bringing this year’s Agrumato-Method Olive Oils to life through featured dishes for a limited time. 🫒

Swipe to see how some of these talented chefs are using our Horseradish Olive Oil and Calabrian Chili Olive Oil ➡️

First up, hear from Chef Lawrence Weeks (@weeksinadaze) of @murrayscreolepub, about how he uses Agrumato-Method Calabrian Chili Oil in his Iberico Pluma Steak with Kilt Kale and Chorizo-Stuffed Potato Roulade:

“This dish is inspired by the feeling of a quick summer dinner grilled over flames. The pluma steak is rubbed in fennel pollen and chili powder, then grilled over a blazing hot grill. Most importantly it gets finished with a sweet maple syrup and rounded out with the tingly, spicy oil.”

Hear from Chef Mark Bolchoz (@chefbolchoz) of @canepazzochs, about how he uses Agrumato-Method Horseradish Olive Oil in their Baked Local Tile Fish with Crackers:

“The oil is super strong and horseradish-forward, while being delicate and light. So, I chose a gentle slow baked fish as a great way to showcase the oil.”

Hear from Chef Brother Luck (@chefbrotherluck) of @fourbyluck, about his experience with Agrumato-Method Calabrian Chili Oil in their Garlic Roasted Chicken with Apple Carrot Slaw, Focaccia Croutons, and Agrumato-Method Calabrian Chili Olive Oil Pesto:

“Great olive oil shouldn’t hide in a dish — it should lead it. The Agrumato-Method Calabrian Chili Olive Oil gave me everything I love as a chef: fruit, freshness, and a gentle heat that lets the ingredients tell their story instead of competing with them.”

Hear from Chef Cheetie Kumar (@cheetieku) of @ajjaeats and @bigcat.brookside, about her experience with Agrumato-Method Horseradish Olive Oil in their Spanish Mackerel Crudo:

“I was so pleasantly surprised by the Agrumato-Method Horseradish Olive Oil’s beautiful, deep, and balanced flavor. It played so effortlessly in the crudo — it took the flavors of the tomato ponzu and the fruity pear into a complex, savory place, and the sweet sharpness of the kohlrabi was lifted perfectly by just a few drops of this beautiful, precious oil.
