The final result… Salmon ceviche in orange juice, featuring mint and chives, among other ingredients. Accompanied by shiitake mushrooms and onion, pickled with—among other things—pepper, parsley, and star anise. Naturally, in a sweet-and-sour marinade…

“Pre-dried” for 2 days at about 20 degrees. This initiates fermentation. Used day 3 to put them in the smoke. 8 hours over smoldering oak wood. Now, after drying for 3 days at about 10 degrees, this is the appearance. The color is already becoming beautifully intense and the smell is amazing. Just 3 more weeks of patience…

After weeks of grinding, mixing spices, writing it down…tasting a little bit…And starting all over again…I think I’ve finally found it. I, and our Be!, find it so delicious now that nothing more can be changed. I ground 4 kilos right away…

For the main course, a delicious sea bream, well-seasoned, but not overly so!! For dessert, a delicious piece of apple pie with cinnamon and walnuts, served cold with whipped cream… It doesn’t get more classically French than this… I think…

👌❤️🐟🐟🥮

Sometimes you have those days… Then you have leftover cauliflower. And boiled potatoes. You look in the freezer and there’s still salmon, and some Dutch shrimp… What do you do then? You make a delicious soup out of it. A touch of citric acid (Yes indeed… E330…) and some dill mixed in, and you’re all set….

Enjoy your meal…
