A rainy day in Denver calls for coffee and craft chocolate!

What a fun surprise to find @fruitionchocolate at @steam_espressobar today. I love discovering craft chocolate in local coffee shops, especially on a cozy, rainy afternoon.

Looks like I have some more chocolate tasting to do!

Which one would you try first?

Such a fun weekend at the Northwest Chocolate Festival in Seattle. Always such a treat getting to share what we make with people who love good chocolate as much as we do.

Made in New York Market is officially open. 🍎

New York is full of incredible makers and small businesses creating beautiful, high-quality goods right here in our state. But outside of markets, fairs and individual shops, they aren’t always easy to find.

We love wandering a good market, discovering something beautifully made, and meeting the people behind it. We wanted to bring a little of that experience online.

Made in New York Market brings together thoughtfully made goods for the home, pantry, garden and everyday life — all made in New York State, with a chance to get to know the makers behind them.

And this is just the beginning. We’ll keep exploring New York, meeting makers and adding new finds along the way.

Beautiful Living. Made in New York.

Are you beginning to see my vision?

A little Dick Taylor, Goodnow Farms, Castronovo, Qantu, Fruition, Venchi, Zotter, Kessho and so many more...

Beautiful wrappers, wonderful chocolate makers, a little gold, a little imagination, and quite a bit of curiosity!

Piece by piece, together we've been gathering the ingredients for this year's Chocolate Wonderland Holiday Dress.

Two years ago, we created our very first dress, and what fun we had bringing it to life!

This year? Well, we have a few more ideas. And as you can see, we've been saving quite a bit of inspiration.

Swipe through to see what's gathering on our worktable, and take a look back at where it all began.

Can you picture what this year's dress might look like?

More to come!

Fruition 68% Dominican Oko-Caribe Dark Chocolate

Bought from Whole Foods, $11 (60 g)

It is about time for me to dive back into a pure dark chocolate, as much as I’ve been appreciating the creativity of several inclusion bars over the last several posts. I believe Fruition does offer a few flavored bars, but their single-origin lineup is what I believe they’re best known for. (And, irrespective of my other opinions of Whole Foods, I think it’s pretty cool that they stock Fruition and other craft chocolatemakers and give them broad exposure.) This bar is dense and has an even heftiness to it. The immediate scent and flavor is lightly smoky, somewhere between hickory and tobacco notes. It has a light sweetness but overall is very cocoa-forward, and delightful to savor.

I've attended many chocolate festivals, but the @nwchocolate has had a special place in my heart ever since my first visit. And honestly, I don't see that changing anytime soon! ❤️

👇🏻 What keeps bringing me back year after year?

✨️ Quality I can count on, discoveries I can't predict.
I know I can expect an excellent selection of chocolate, which makes the trip worthwhile before I even arrive. But I never know exactly what I'll find, and that element of surprise keeps my curiosity alive.

✨️ The freedom to explore without a shopping list.
We tend to buy what we already know and enjoy. At a festival, I'm much more inclined to try an unfamiliar ingredient, an unusual combination, or something I wouldn't normally choose. Sometimes the best discoveries happen when you're not looking for anything in particular.

✨️ My tastes keep evolving, too.
It's not just the exhibitors and their collections that change from one edition to the next. My palate changes as well. Something I didn't particularly enjoy a few years ago might appeal to me today.

✨️ The people I look forward to seeing again.
Over the years, familiar faces become friends, conversations continue, and new connections are made. There's something special about being surrounded by people who share the same enthusiasm for chocolate.

✨️ It's become a personal tradition.
Some events are worth attending once. Others become something you genuinely look forward to every year. For me, the Northwest is one of those events I would happily return to again and again.

😍 I'd love to hear from everyone who attended this year: which new chocolate makers, bars, or unexpected creations impressed you the most?

👇🏻Share your discoveries in the comments. I'd love to know what I might have missed! 🍫

The @nwchocolate Festival has come to an end… and what a beautiful few days it has been. 🍫

A time to reconnect with friends, meet new people, revisit familiar flavors and discover new creations from all around the globe, some whimsical, others daring, and many simply delicious.

I particularly enjoyed the presentations that took us on a journey through the world of cacao and chocolate: starting from the roots of cacao to exploring flavor profiles from different origins, learning more about the role of women in cacao, and even discovering how to grow your own cacao tree at home. 🌱

But one theme seemed to be emerging more and more strongly throughout the festival: the return of drinking chocolate. ☕🍫

From presentations to dedicated booths, this ancient way of enjoying cacao seemed to be reclaiming its place alongside the more recent tradition of chocolate as a solid bar. There was something as heartwarming as a cup of hot chocolate about seeing it getting so much attention, a reminder of how long and rich the history of cacao really is.

Goodbye, NW Chocolate Festival and Goodbye, Seattle. See you next year! 🤎

SEATTLE RECAP // DAY 2 — Friday was the day of the Unconference, a day-long gathering for craft chocolate industry professionals. I didn’t take a ton of photos but you HAVE to see the last one :)

Between 9 to 5, you had a chance to attend different roundtables on topics ranging from “The Challenges of Craft Chocolate” (moderated by @sunitadetourreil and @chiefchocophile), “The Realities of Running a Retail Shop” (led by @chocolatedispensary), and “Working with a Distributor” (led by @mcaputo801 and @ycaputo of @a_priori_foods).

People join the Unconference from all over the world — I met people from France, Colombia, Jamaica, Trinidad and Tobago, and Venezuela. It’s a great place to truly connect with colleagues you follow on Instagram and never thought you’d meet.

With @chocedworkshop grad Sarahbeth

After a decade exchanging with Nick of @oneonecacao in Jamaica, I finally got to meet him. We talked about so many things and I’m glad I bought his curry goat bar the next day ;) Also on the photos are Nadine of @likklemore.chocolate industry Jamaica and Cherie of @kairichocolatett of Trinidad and Tobago.

The Unconference concluded with best of show award dinners. Look at how many women won. 10 years ago, there were so few women in chocolate and now they win best-in-show awards. I can’t think of another industry where women representation increased so spectacularly over such a short amount of time.

Feeling beyond grateful for a wonderful weekend in Seattle at the Northwest Chocolate Festival.

When I arrived to the festival’s un-conference I had no idea what to expect, but as I met people I was asked what I do and that’s when I started to refer to myself as a “baby” chocolate maker as the newbie that I am.

As I continued to meet and introduce myself it was apparent that chocolate wasn’t the only thing people had in common, but that this is a community of collaboration and wanting to see one another succeed.

These are amazing talented people and as a “baby” chocolate maker I hope I can be like them when I “grow up”

I am feeling so encouraged after learning and experiencing chocolate through others with such wonderful experiences.

And of course I indulged on so much chocolate. I firmly believe everyone should have a chocolate library of which to enjoy and I definitely grew mine more from this trip.

Besides enjoying all the brands to seeing developments in chocolate from people like those at @cocoterra_co, it was a pleasure to meet so many people, many thanks to @miocenechocolate, @cocoabeantown, @chiefchocophile, @thechoconnector for sharing in knowledge and passion
