☕️ STICKY COFFEE PUDDING 🤤

Today, more than any other day, we want you to think about homelessness. With the eviction ban ending this weekend and housing supply scraping the barrel and demand at an all-time high, we firmly believe housing should be a fundamental right.

We’re in frequent awe about the work @pmvtrust does to support those living through homelessness plus those at risk of becoming homeless in Ireland. Opening doors for 40 years, their Housing First programme particularly stands out. Think we can all agree, unfortunately, their work is more important and in demand now than ever. We really wish it wasn’t the case. But that’s why we want to support them as much as we can, and we’d like to encourage you to support too, if you can?

How? Well today marks the launch of #TheGatheredTable: A Taste of Home — a fantastic collaborative cookbook bringing together over 50 contributors across the food sphere, organised by @gatheredireland and published by @9beanrowsbooks. We were honoured to be asked to provide a recipe, with the brief of the most comforting dish that reminds you of home. Ours is in the dessert section, a super indulgent, simple and comforting sticky coffee (yes coffee, not toffee) pudding ☕️

We hope you can support this cookbook and all it stands for and supports. All proceeds are going to Peter McVerry Trust. Order (€30) from ninebeanrowsbooks.com or pick up in bookshops and independent retailers around Ireland 🙏🏻 ✨

A year ago this week we snuck off to @thewoollenmills to meet @roisinhealy321 and @philldoylephotography for a chat and a snap or two for @irishcountrymag 💕
Note: we don’t scrub up well — this is *ALL* Phill’s mastery with a camera and natural lighting! 😂 Such a wonderful afternoon and as far as we remember the interview went out in the November issue. Lovely memories — we later spoke at their #IrishMadeSummit in March of this year all about the power of social media and how to harness it to work for your brand 📲

Left the most highly recommended place on our list ‘til our last bite before dashing (literally) to catch the bus back to Bilbao 🏃🏻🏃🏻💨 #AD
Bar Nestor is *legendary* in Donostia-#SanSebastián, not least for the daily tortilla (one of the most highly sought after, difficult-to-nab plates in the city as only two are made daily — one for lunch, one for dinner, 16 slices each time and you’ve to put your name down for it before opening) but more famously for their all-day offering: #txuleta! 🥩 🔪 🔥
Seared sirlion on the bone (chosen by appearance and then cooked for you to medium-rare perfection), with only flaky salt to season as it’s all it needs. Melt in the mouth meatiness, served with tomato salad, pan-fried padrons and bread on the side. Start with a couple of Gildas, enjoy a few glasses of wine, and you’re eating one of this city’s most iconic menus🍴

Tempted to come here too? @aerlingus flies year-round to #Bilbao (under 90 mins by bus/car from here) and you could be jetting off on your own getaway to any Aer Lingus destination in Europe with our #WakeUpToWinter competition! T&Cs and how to enter on our stories! You can enter below, if you know how! 😉

Guindilla peppers — an emblem of the #Basque Country and essential in the most famous #pintxo of all time: the Gilda, and let us tell you a story about it.. [AD]

So, #pintxos didn’t exist until around the 1940s. The iconic bite of the Basque are a fairly new creation and the #Gilda, it’s most iconic, is named after Rita Hayworth’s character ‘Gilda’ in the film of the same name, representing its elegance, sharpness and spiciness in one mouthful. The saucy picture was at one time illegal to watch!
Simple yet sublime, the Gilda is pickled guindilla pepper, cantabrian anchovy and a manzanilla olive, skewered together and enjoyed together in one senstantional mouthful. If you come to Donostia-#SanSebastián, this and a glass of chilled, lightly sparkling #txakoli should be one of your first tastes
#WakeUpToWinter ✈️🍸🍢🍴 @aerlingus flies direct from Dublin to Bilbao year-round and San Sebastián is a mere hour’s drive away, check our Stories for more snapshots and information ✈️

Okay, Inis Mór who do we have to speak to to give the Lucky Star Bar a bit of love and life? 🤔👀 #TasteTheIsland ☘️
🍴 🥃 🍽 🍸 ☕️ 💎
Two non-local, non-professionally trained cooks under 30 with rusty #Gaeilge and lots of ideas running riot in our heads right about now after lusting over this derelict property 🤯 hit the heart if you think this should happen (and tag your favourite angel investor in the comments! 😘🤣😏)

Few things a big steaming bowl of mussels, brown bread and a side of chips served in a proper Irish pub can’t heal! 😍 #TasteTheIsland #AD 🍴
Last night was rainy and stormy on Inis Mór and we hightailed it to Tigh @joewattys for impeccable pints of the black stuff and dinner, of which this special was the star. Huge Irish-grown mussels, just cooked until tender (read: not chewy or chalky) and swimming in a garlic cream liquor that we’d gladly bathe in ourselves. Refuge from the rain, a gentle lull of traditional music in the corner, and this to meet you on the table? This is the #AranIslands 😍😍😍😍
