I think I found every ice cream lover’s dream day… 🤍

If you know me, you’ll know I never say no to ice cream, so spending the day with the Snugburys family in Cheshire was an immediate yes.

From making my own maple pecan ice cream, to going behind the scenes to see how their award-winning ice cream is made, enjoying the most gorgeous home-cooked lunch and tasting more flavours than I could count… this really was my kind of day.

The crème brûlée completely surprised me, and I still can’t stop thinking about the olive oil soft serve with sea salt. I know it sounds unusual, but trust me… it just works.

What made the day even more special was the family behind it all. They made us feel so welcome and you could really see how much love goes into everything they do.

If you’re ever looking for a countryside day out with some seriously good ice cream, Snugburys is definitely worth a visit. Their farm is open throughout the summer, with over 50 flavours to choose from and honestly… I already want to go back.

Paprika & Parmesan Hasselback Potatoes 🥔🧀✨

The ultimate proof that potatoes are the most versatile food on the planet. These crispy, golden hasselback bites are brushed with a smoky garlic oil and finished with a mountain of parmesan. Perfectly crunchy on the outside and fluffy on the inside 🤤

🛒 Ingredients
• 2 large potatoes
• 4 tbsp olive oil
• 1 tsp paprika
• 1 tsp garlic granules
• Salt & pepper to taste
• Fresh parsley, chopped
• Parmesan cheese, finely grated

👩‍🍳 Directions
1. Peel the potatoes and cut them into rounds roughly 2cm thick.
2. Place chopsticks or wooden spoons on either side of a potato slice to act as guards. Make thin horizontal cuts along the top, then flip the slice over and make diagonal cuts on the other side to create the “criss-cross” effect.
3. In a small bowl, whisk together the olive oil, paprika, garlic granules, salt, and pepper.
4. Place the potatoes on a baking tray and brush generously with the seasoned oil, ensuring it gets into all the crevices.
5. Bake in the oven at 180°C for about 25 minutes until the edges are crispy and golden.
6. Remove from the oven, top immediately with grated parmesan and fresh parsley, and serve while hot.

Pan crisped sea bass with spinach and butterbean ragu 🤌🏼

I took inspiration from @gems.table creamy leek and butterbeans, but made it spicy 😮‍💨

Slow cooked the @boldbeanco butterbeans like a ragu in the @madein saucier, then topped it with a crispy pan seared sea bass made in my new @hexclad_europe 30cm hybrid pan.

For how easy this dish was it tasted like something you’d get at a restaurant, incredible.
