A little late to post... but too good not to - shots for @po8gallery Substratum exhibition.

An exhibition ‘celebrating the elemental power of Australian gemstones and the artists who transform them’.

These were some truly exceptional pieces and I had a brilliant team to work with on this shoot. 💫

Here’s some meat free Monday inspo and a damn good recipe at that. It’s kale, feta, yoghurt and chili with baked eggs and it’s super easy to make. Be sure to make the recipe in an oven proof pan like this excellent pan from @theoriginalgreenpan.anz
Ingredients:

200g kale

1 clove garlic, peeled and finely chopped

1 red chili, peeled and finely chopped

1-tablespoon extra virgin olive oil

30g feta

50g yoghurt

Pinch cayenne pepper

Sea salt and cracked pepper

4 higher welfare eggs

Method:

Pre-heat the oven to 180C.

Heat the extra virgin olive oil over a medium heat in an ovenproof non-stick pan. Add the kale and sauté while stirring for one minute before adding the garlic and the chili, season with salt and pepper and continue to cook for another minute.

Remove the pan from the heat, make four little pockets in the kale and crack an egg into each pocket. Pop the pan into the oven for three minutes.

While the eggs are in the oven combine the yoghurt and the cayenne pepper together.

Remove the pan from the oven and crumble the feta over the eggs and kale, and also drizzle over the yoghurt, pan goes back into the oven for a further 2 minutes or until the eggs have set.

Remove the pan from the oven, the egg whites should have made there way through the kale and actually set the whole dish almost like a frittata.

I normally pop the whole pan on the table with a spatula and serve it family style but you can also serve individual portions, you will find that you can probably actually cut it into slices.

Enjoy xx

😋 Today, I found this on the Galora app.

Homegrown figs, freshly picked right in front of, me and Rhubarb Strawberry Jam.

🏡 They come from the home of Roger Lindmark, and the jam recipe is his mother's from his childhood in Minnesota in the 50s.

Mama Lindmark canned everything to feed her family, rhubarb, tomatoes, even pickled watermelon rind. Anyone heard of that?

She stored the jars under the stairs in their Milwaukee home and Roger remembers she would give the kids ice cream with rhubarb jam after church.

What was the last time the checkout person at the grocery store told you a story like that?

This is what happens on Galora.
