This asparagus gratin with crispy prosciutto is the kind of side dish that steals the spotlight. Tender asparagus tucked under a creamy, cheesy sauce and finished with salty prosciutto for the perfect bite!

Ingredients:
2 lbs asparagus, woody ends trimmed
5 tbsp butter, divided
3 tbsp all-purpose flour
2 cups milk
1 tbsp Dijon mustard
1 ½ cups shredded Gruyere cheese, divided
¾ cup parmesan, grated and divided
Salt
Pepper
2 tbsp chives, plus additional for garnish
6 slices prosciutto, torn in half
⅓ cup panko breadcrumbs

Yesterday’s Low-sugar Mandarin Jam (preserves?). Coming in at a whopping 7g of carbs per tablespoon (typically 2-3x that for commercial jams and jellies). A couple firsts: making jam with no/lo sugar pectin, made jam from oranges, got back into canning, want to make a marmalade and a curd now. #jam #jelly #preserves #getgettys

🦪 PEI- Part 2

My time on Prince Edward Island felt like stepping into a living cookbook; every chapter written by the people who grow, fish, and cook here.

✨ We dined at the Sea Rocket Oyster House, where I had more oysters than I could count. PEI’s oysters have been world famous since the 1800s and it’s easy to see why. @sea_rocket_oysters

✨ We began at the ABPI Beef Plant, where I saw firsthand the care and pride that goes into PEI beef — raised by multigenerational farmers who truly love what they do. @peicertifiedbeef @apbibeef

✨ Out on the coast, we met fishermen pulling mussels straight from the water and learned how oysters are harvested from PEI’s cold, clean waters. The process is beyond fascinating and is worth a trip just to learn and see how it’s done. The oysters are grown in floating cages that suspend in the water.

✨ And PEI’s mussels are North America’s favourite, supplying nearly 80% of what’s enjoyed across the continent.

✨ Driving across the Island, I understood why it’s called the one-million-acre farm. Almost half the island is farmland; red soil, rolling fields, and people who’ve built their lives around growing good food for others.

✨ Dinner at Sim’s Steakhouse brought it all together — Chef Brian cooked PEI beef from the ABPI Plant and it was, without question the best I’ve ever had.

✨ Before heading home, we toured the Culinary Institute of Canada and got a behind-the-scenes look at Canada’s Smartest Kitchen — a place where creativity meets science. It’s where new recipes and products are developed and tested, turning ideas into dishes that just might end up on your table one day.
