LAZY GIRL LUNCH.
For when you want something good but absolutely do not want to cook. Creamy cottage cheese, peak-season tomatoes, really good olive oil, flaky sea salt, lots of pepper, chives + a handful of salty potato chips to scoop it all up.

High protein, healthy-ish, five minutes, no recipe required.

THE “RECIPE”
Cottage cheese (@good_culture )
Tomatoes (dry-farmed if you can find them)
Good olive oil (@getoolio )
Maldon sea salt
Fresh cracked pepper
Chives
Sea salt potato chips (@sietefoods is our fav)
Pile it all into a bowl. Measure nothing. Scoop with chips. Lunch is served ;)

BURRATA PEA PESTO 🌿

Ingredients:
1 lb pasta
2 cups fresh basil
1 garlic clove
1 lemon, juiced
1’” chunk parm + more fresh grated
1 1/4 cups cooked peas
Fresh burrata
Olive Oil
Salt & pepper
Red pepper flakes (optional)

Directions:
Bring a large heavily salted pot of water to a boil. Cook pasta per package instructions, making sure to reserve 1/2 cup pasta water.

In a food processor, combine basil, garlic, lemon, 1’’ parm, 1 cup cooked peas, a little olive oil, salt and pepper. Blend until smooth.

Mix the blended sauce in with the cooked pasta, slowly stirring in a little pasta water at a time and more fresh grated parmesan. Stir well to combine, adding more pasta water if you prefer a lighter, smoother sauce.

With the remaining peas, mash together with a little olive oil, salt and lemon juice.

Plate the pasta, and top with dollops of fresh burrata. Spoon over the lemon peas, drizzle of olive oil, red pepper flakes. Enjoy!
