My team of chefs and the essential hands are the real backbone of the kitchen. Every ambitious menu that we drop together challenges them to reconfigure their prep schedules, how to reset the entire line, reformat their own prep sheets... all while simultaneously staying up on the pars that serve nearly 1800 guests a week, improving their systems week after week, and maintaining a sense of curiosity and creativity for the next menu still to come.

It’s really because of them that I am even able to stay level headed and grounded as a leader, to be present as a better husband/father, and continue to stay creative so that together we can to bring fun things to the plates in our city.

I’m blessed to be able to travel, to gain inspiration, and to make new memories with my family... all because I know that this team of cooks are just as passionate and just as dedicated to serving this community the best that they can offer.

Obachan would always remind me “kansha itashimasu” to have a deep, profound sense of gratitude for all forms of support that come from our hard working team and our community... this is probably what she meant
