If I could go back and speak to that little boy, this is what I’d tell him: • Block out the noise. Not everyone deserves a seat in your life … focus on the ones who actually love and support you, and let the rest fall away. • Trust your gut. If it doesn’t feel right, it usually isn’t. • When change is needed, move on it. Don’t wait for permission. •When you feel lost or low, go back to God. That’s where the answers always are. • Help people as often as you can, expect nothing back. That’s where real peace lives. • Ignore the haters and doubters. Let them fuel you, not stop you. Keep putting on a show for them … trust me, they’re watching. Just make sure that show keeps getting better and better. Finally… change how you see the hard moments. Not everything that feels negative in the moment actually is. Sometimes it’s just life shaping you into who you’re supposed to become, the version of you that one day looks back and says thank you for the tough seasons, not just the easy ones. Grateful for every person in these pictures who helped shape that path. This is for the kid who had no idea what was coming. The show goes on! 🔒📈🎯

One of our most popular and famous in the area Baus in town!!! Look how white the dough is!!! Look how light and fluffy they are when steamed piping hot!! Look how red and syrupy the honey Char Sui filling oozing from the gaping dough!! Did you know...FACT..... The Liverpudlians are probably the first educated English if not European to know about the ‘Char Sui Bao’ due to the early settlement of the Chinese seamen docking in Liverpool in the 1940s, the oldest China Town in Europe. The local scousers integrated with the Chinese on the docks, the ships or now called ‘China Town’ near the port, ate traditional Chinese food such as this. A Bao or bun or BIG BAO known as the Dia Bao or CharSui Tan Bau was the bigger version but a glazed bun was convenient, easy to eat and filling snack. Can we compare the equivalent pastie for the English miners? ha Cha siu bao (simplified Chinese: 叉烧包; traditional Chinese: 叉燒包; pinyin: chāshāo bāo; Jyutping: caa1 siu1 baau1; Cantonese Yale: chā sīu bāau; lit. ‘barbecued pork bun’) is a Cantonese baozi (bun) filled with barbecue-flavored cha siu pork. The size should be half filling half dough!! Enough for 2/3 mouthfuls!! A good CharSui bun -The syrup filling should be light and transparent, showing the quality of the light roasted CharSui! The dough should be so light and NOT heavy that the dough should melt in your mouth!
