We went for the food…but a sore throat struck the traveler! 😅

Our food choices were based on warm and soothing after day 1 but we still managed to eat lots of delicious food! We will be back for an Italian beef, hot dog, and pizza next trip! 😜

Ahhhh the city!

Cutest B&B, best food, a comedy show, architectural tour, miles of walking, the hustle and bustle of daily life in Chicago, exploring all the neighborhoods, and of course shopping! 😅

As usual, I’m one to pack in as much as I can, and Gracyn was a trooper! She ended up at Urgent Care on day 3, with strep! But pushed through and made the most of our adventure together! Can only imagine what we would’ve done if she felt better 😜

I’m confident this girl would do well on her own anywhere life takes her! It was a trip to remember in one of the most fun cities I’ve traveled to!

What’s fun about having your college daughter home for the summer!? She’s became a great cook and baker because she was raised in the kitchen! 🤗

She made these last night and they’re so good! Mostly sweet from the fresh berries! 😋

Lemon Berry Muffins:

Ingredients:

Combine wet ingredients:
~2eggs
~1/3C maple syrup
~1/4 C avocado oil
~1tsp vanilla
~3/4 C Greek yogurt (my go to is @fage )
~juice of one lemon
~2Tbs almond or oat milk

Combine dry ingredients:
1.5C flour
1C oat flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 Tbs poppy seeds
Zest of two lemons

Mix all together. Gently fold in 3/4C raspberries and 1/2C blueberries (prefer fresh fruit but frozen will work as well)

Preheat oven to 375. Line 12 muffin liners and can spray with cooking spray. Fill each 2/3 C full and add a few fresh berries on top! Bake for 22-26 mins. Enjoy!
