Since this potato wrap is now a viral thing, thought it would be fun to try and do it with sweet potatoes! It might look difficult but it was actually quite simple.

There is nothing wrong with using white potatoes, but I am personally a fan of the hint of sweetness and slightly higher fiber content sweet potatoes possess. I am also genuinely curious how this will work!

The key to making this easy is slicing the potato with very thin or using a mandoline. I personally own this really cool apparatus Nutribullet sent me years ago called the Veggiebullet. It works like a food processor, but has special blades for making spiralized and julienned style products.

I used it to cut my potatoes and they were the perfect size and very thin. Set the oven to 400F and lay parchment paper on a baking sheet. Lay the potatoes 3x4 side by side and slightly overlapping on the sheet. Spray some olive oil cooking spray, then 3-4 tablespoons of Parmesan cheese to cover it. Then 1 tsp. of herbs of your choice and some salt.

Place this in the oven for 12 minutes. Cook a 4 oz. piece of ground bison (or whatever protein you chose) on medium heat with a little olive oil and 1 tsp. more of your herbs of choice. Cook 6-7 minutes and set to the side.

When the potato wrap comes out, let it cool 5-6 minutes and then place the bison in the middle of it, wrap and enjoy. It’s a hearty and unique little meal. Feel free to have a salad on the side, or you can try to add greens inside the wrap, but I liked this on its own, because the cheese and herbs from the wrap made it hearty enough.

Is this something you would try at home? Tell me in the comments. 👩🏻‍🍳❤️🍠

After a delicious meal at @tedsmontanagrill we were on such a bison kick that we decided to cook some at home! We made some bison nachos with seasoned ground bison, tons of cheese, guac, & salsa. The bison cooked up so well & was the perfect topping to our nachos. We love that bison is rich in omega 3 fatty acids is so lean. It takes on flavors so well and should definitely be on your grocery list to try asap! Check out @greatrangebison and @nationalbison to learn more and find out where you can get bison locally!

Homemade Bison Ravioli 🍴 Don’t get me wrong, I love going out and trying new restaurants in Denver, but sometimes you just crave a home cooked meal that you can enjoy while watching your favorite tv show. #Sponsored I’m partnering with The @nationalbison Association, to make a bison recipe, and I really wanted to try making ravioli for the first time! I recently had bison at @tedsmontanagrill here in Denver, and it was so delicious! July is National Bison Month, and I decided to create a Bison Ravioli recipe with a Sage Butter Sauce. 🧈 If you’ve never tasted bison before, it’s got a similar taste and texture to beef, but it has less fat, and has a slightly sweet undertone. It’s also high in iron, omega 3s, and is leaner than beef, so I was excited to cook with it for the first time. Homemade ravioli definitely has a learning curve to it, but it was super fun to make, and I have SO much respect for people that make handmade pasta for a living! It was hard work! 💪

Bison Ravioli
Ingredients:
Pasta:
2 cups flour
pinch of sea salt
3 eggs
olive oil

Filling:
1 lb ground bison (I used @greatrangebison )
3 tbsp butter
1 medium onion, diced
4 ribs celery, diced
2 cloves of garlic cloves, chopped
1 egg
1/2 cup grated parmesan cheese
1/2 cup breadcrumbs

Sauce:
1 stick butter
handful of fresh sage leaves
pinch of salt (to taste)

Instructions:
For the pasta dough, put your flour on your counter or a large cutting board, and sprinkle with salt. Make a well in the middle and add your eggs, and start whisking the eggs gently and slowly start incorporating the flour into the eggs. This takes a little bit of practice, and work slowly so that your eggs don’t leak out. Once the flour and eggs start to come together, put olive oil on your hands and knead the dough for 10-15 minutes until it forms a smooth ball (add more olive oil, as needed). (cont. in comments)

I feel like there are so many recipes that you could use bison for, and I’m excited to try making bison tacos, meatballs, burgers, ect... Please let me know if you try making this recipe, and I hope you love it as much as I do! 💜

This steak salad is so simple, but sooo good!🤩 I especially love making these when I have leftover steak. The creamy balsamic dressing pairs perfectly with this salad.🙌

#whatsinmybowl: mixed greens with tomatoes, avocado, red onion, blue cheese crumbles, @greatrangebison bison steak (regular steak also works), and a homemade creamy balsamic dressing!

Creamy balsamic dressing-
1/4 cup EVOO
2 tbsp balsamic vinegar
1 tsp Dijon mustard
2 tsp honey
1 tsp garlic salt
