NO LETTUCE, ALL THE FLAVOR! 💕

We’re making this High-Protein No-Lettuce Mediterranean Chicken SaladLIVE TONIGHT on The Weekly Chew! 🎥✨

It’s crunchy, fresh, packed with protein and fiber, and PERFECT for bariatric-friendly meal prep!

🥗 INGREDIENTS (6 servings)
🍗 2 lbs chicken breast, cooked & chopped
🥒 2 English cucumbers, diced
🍅 1 pint cherry tomatoes, halved
🧅 1 small red onion, diced
🫛 2 cups shelled edamame, cooked
🫘 1 can (15 oz) chickpeas, drained
🧀 6 oz crumbled feta
🌿 Fresh parsley, salt & pepper

🍋 LEMON DIJON DRESSING

* ¼ cup olive oil
* ⅓ cup fresh lemon juice
* 2 tbsp Dijon mustard
* 1 tbsp honey
* 1 garlic clove, minced
* Salt & pepper to taste

👩‍🍳 LET’S MAKE IT!
1️⃣ Season and cook chicken to 165°F, then chop.
2️⃣ Combine veggies, edamame, chickpeas, and feta in a large bowl.
3️⃣ Whisk together dressing ingredients.
4️⃣ Add chicken, drizzle with dressing, toss & ENJOY!

Nobody really prepares you for the “now what?” after survival mode. ❤️

I’m breaking from my normal content because I cannot stay quiet about this.

Everything I keep seeing around the Cornell 7 case brings me back to one thing: consent is not complicated.

If someone is unconscious, impaired, unable to understand what is happening, or simply has not said yes that is not consent.

And if you’re standing by, watching, messaging about it, laughing about it, or doing nothing? We need to talk about that too.

As someone who understands what it’s like to experience sexual assault, this hits hard. We have to teach our kids about consent, respect, boundaries, and what it means to step in when someone is vulnerable.

I don’t care if this isn’t my “normal content.” Some things are bigger than an algorithm.

Teach consent. Protect people. Speak up. Do better.
