DIRT DONT FIX OUT NOW

Pinakbet is traditionally made with pork, however, I had some leftover longganisa from the spooky burgers and decided to create longganisa meatballs for a little different pork flavor in this traditional Filipino dish.

While pinakbet is full of savory and umami flavors from the pork and bagoong, the distinctive bitter taste from the ampalaya, or bitter melon, is really what stands out in this dish. Let’s cook!

Check out my previous longganisa recipes for the ingredients and recipe.

Ingredients:
* ~1/2 lb Longganisa
* 1/4 cup Panko Bread Crumbs
* @tfti.bbq Cajun Honey Rub from @tftibbq.shop
* 1 Ampalaya (bitter melon), deseeded and sliced
* 1 Chinese Eggplant, cut in 2” spears
* 6 Okra, sliced in thirds
* 1/4 of a Squash, sliced
* 8-10 Green Beans, cut in thirds
* 2 Roma Tomatoes, diced
* 1 small Onion, diced
* 6-7 cloves Garlic, chopped
* 1-2 Tbsp @getgraza EVOO
* 1 spoonful Bagoong
* 1 cup Chicken Broth
* Rice, cooked

Recipe:
1️⃣ Add bread crumbs to longganisa and form 1” balls
2️⃣ Add meatballs to cast iron skillet and sprinkle with Cajun Honey Rub and place on indirect side of the grill with a couple wood chunks over the coal for added smoke for about 30 minutes
3️⃣ Heat EVOO in a wok and add onion and garlic, letting onion start getting translucent
4️⃣ Add tomatoes to sweat out and squash to begin softening before adding bagoong and chicken broth
5️⃣ Add remaining vegetables and simmer to desired softness / firmness
6️⃣ Add cooked meatballs and combine
7️⃣ Serve over a bed of rice to enjoy the intense savory and bitter flavors!
