One Tray Series - Episode 2

FF’s Thai red curry chicken with a coconut baked rice.

Serves 4

1. Char the chicken

Add the 5 chicken thighs to a cold pan and coat with the 2 tablespoons of red Thai curry paste and 3 tablespoons of fish sauce. Add a generous glug of olive oil and place over high heat. Cook until the chicken has a good char and colour, then remove from the pan and set aside.

2. Build the curry

Preheat the oven to 180°C. Using the same pan, add another glug of olive oil, followed by the 5 finely chopped garlic cloves and chopped ginger. Give everything a good stir, then add the 400g basmati rice. Pour in the 300ml coconut milk and 300ml chicken stock and stir to combine.

Let it cook for a few minutes before adding the handful of curry leaves, 2 smashed lemongrass stalks and 2 red chillies, adjusting to taste. Return the chicken thighs to the pan, cover tightly with tin foil and transfer to the oven for 30 minutes.

3. Make the smashed cucumber

Give the cucumber a good bash with a rolling pin or the flat side of a cleaver until it cracks open. Chop it into rough, bite-sized chunks and throw them into a bowl. Add the tablespoon of fish sauce and tablespoon of chilli crisp oil, mix everything together and set aside while the curry finishes cooking.

4. Serve

Plate up the chicken and fragrant rice alongside the spicy smashed cucumber. Tuck in and enjoy
