My heart is so full 🖤 for the incredible people who continue to show up for the animals. 🐄
The amount of love, time, thought, and planning that has gone into this trunk-or-treat is so special. These are people who give so much of themselves because they care. Because they believe these animals matter. And because they want to make a difference! And they are!

The love this little community has for animals is truly palpable. And seeing everyone come together, support one another, and create something so meaningful reminds me that you don’t need a huge community to make a huge impact.

To everyone who has put their heart into making this happen, thank you. Thank you for showing up, for caring so deeply, and for being a voice for the animals.

I feel so lucky to be surrounded by people whose hearts are in the same place. I love every one of you! 🎃🫶🏼🧡

Have you tried The @heartybeetut ? Are you ordering the nachos or the poké bowl first? 👇🏼💚

I took my parents to The Hearty Beet to show them a few of my favorites, and we may have found some new ones 😍🌱

Of course we had to get the OG Loaded Nachos. These may be the most filling nachos in Southern Utah because Britney does not skimp. Chips, a layer of all the goods, more chips, then another layer of all the goods. That is how nachos should be done 🙌🏼

The real surprise was the Beet Poké Bowl. Ohhhh my goodness! It may officially be coming for the nachos as my new favorite. I had to fight my mom just to get a few bites 😂

We also tried the famous Beet Lemonade, Berry Banana Smoothie, and the freshest pressed juice made with beets, ginger, carrots and apples 🍎🥕🍹

The coolest part is that everything is vegan, but even the biggest carnivore will leave completely satisfied. You will not miss the meat! The entire kitchen is also 100% gluten free, so no gluten even enters the building. And do not leave without checking out the cheesecakes/pies and GF cookies because they are SO good 🍰🍪

Vegan loaded nachos from @heartybeetut in St. George, UT!

These were absolutely delicious. The pico de gallo was fresh, the beans were savory, and the cilantro sauce added a tangy zing. Will definitely return! They’re also very affordable.

If you end up going, keep in mind that the half portion is more than enough for one person.

I had a good birthday weekend 😊
Couldn’t really decide what I wanted to eat for my birthday dinner. Ended up having a birthday feast all weekend 😁😋
— I started off on Thursday by having a Beet Banana Berry Smoothie from Hearty Beet. Dinner was a Chicken Yakisoba Noodle Bowl (gluten-free) from Hook’d on Bowls. Mom ate 1/2 of her Yaki Bowl (as she likes to call it).
— On Friday, my actual birthday, I started off drinking an Apple, Beet, Carrot Juice from Hearty Beet. I opened presents when Mom got up. I got a few new outfits, a couple of new shirts, and a few things for the kitchen (Amazon Prime Day was a good day 😁). Then I had an açaí bowl from HB Beverage Co while watching Hallmark Christmas in July movies. My dinner was a nacho bowl from Hearty Beet. Mom ate the other 1/2 of her Yaki Bowl. My birthday dessert was a free gluten-free Chocolate Chip Bundtlette from Nothing Bundt Cake. Mom and I split it. Half for each of us was perfect.
— On Saturday, I ate a Mango Smoothie Bowl from Hearty Beet. Binge watched The Boroughs on Netflix with Mom. Dinner was a Chicken Thai Chili Rice Bowl from Hook’d on Bowls. Mom had 1/2 of her Yellow Curry from Benja’s. Dessert for me was a free Chocolate Almond Cheezcake from Hearty Beet. Mom’s dessert was free Mango Sticky Rice from Benja’s. Found out I did not win the PowerBall 😕
— On Sunday, I ate a Berry Smoothie Bowl from Hearty Beet. My dinner was another Chicken Thai Chili Rice Bowl from Hook’d on Bowls. Mom ate the other 1/2 of her Yellow Curry. Found out that HB Beverage Co closed, possibly forever. They were the best in town. I hope they choose to reopen in a new location rather than close forever.
— On Monday, I drove to Beaver Dam to get more chances at winning the lottery ☺️🙏 On my way home, I stopped by Del Taco because that sounded good, and I didn’t have to get out of the car in the heat. I got Chicken Soft Tacos and a Large Fry for me. Got Mom an Epic Grilled Chicken Fresh Guacamole Burrito (which will take her 2 days to eat).
I ate all that good food and still managed to lose a pound 😃 Well, that was before I ate at Del Taco 😆
I had a peaceful, relaxing birthday weekend ☺️

Have you ever heard people say “eat the rainbow” and thought, okay cute, but am I supposed to just casually become a salad influencer overnight?

@heartybeetut in Washington, Utah makes it a whole lot easier.

Their food is so colorful it almost feels like cheating. Bright beet salads, fresh fruit, hummus, hearty bowls, beet drinks, and yes, a purple sweet potato pie that deserves its own moment. Everything is fresh, beautiful, and full of flavor without feeling like “health food” in the sad way.

It is the kind of food that makes you want to eat better because it actually looks good, tastes good, and leaves you feeling good.

If you are in Southern Utah, add Hearty Beet Cafe to your list. Your body and your camera roll will thank you. 🍏🥕✨
