Better late than never. 🌸

Summer has a funny way of moving faster than we expect.

Between long days, busy kitchens, full calendars, and one beautiful evening rolling into the next, somehow July 25th already feels like a lifetime ago.

But some nights deserve another moment.

Our Pretty in Pink evening was one of them.

From the first cocktail poured and the first cheers around the table, to fresh Atlantic oysters, plates leaving the kitchen one course at a time, laughter carrying through the room, and those wonderfully quiet moments when everyone was simply enjoying what was in front of them — that evening was everything we love about private dining.

Beautiful food is only part of the story.

It's the people gathered around the table. The conversations between courses. The glasses raised a little higher. The laughs you can hear from the kitchen. The moments that weren't planned, but somehow become the ones you remember most.

So yes… this recap may be arriving a little late.

But after a wonderfully crazy summer, it feels pretty special to finally slow down, look back, and appreciate just how much fun this night truly was.

One table.
One unforgettable group.
One very Pretty in Pink evening. 🌸🥂

Thank you again for allowing East Coast Salty Fork to be a small part of such a special celebration.

Here’s to good food, great company, and evenings worth looking back on.

Mini summer 2026 dump.

So blessed to be able to travel around Canada coast to coast through my love of music and make great memories with amazing people 🫶

Here’s a little collection of my trips from BC, Halifax, Niagara Falls, UKG 514 and my Piknic adventures. 2026 has been quite the ride.

Every wonderful evening eventually finds its final course.

By now, the room had settled into that familiar rhythm only shared among lifelong friends. Laughter echoed effortlessly across the table, stories were retold with even greater enthusiasm, and every smile carried the comfort of years spent together.

As our Pink Lemonade Cheesecake found its place before each guest, no one seemed eager for the evening to end. Conversations lingered between every bite, glasses remained raised, and the final course became one last opportunity to savour a celebration that had been months in the making.

For me, that is the true beauty of private dining.

Not simply preparing a meal, but having the privilege of becoming a small part of moments that matter.

Watching a table full of best friends celebrate the soon-to-be Mrs. Wickstrom was a beautiful reminder that the most memorable evenings are never defined by the menu alone. They are remembered for the laughter that filled the room, the stories shared between courses, and the love surrounding the people who matter most.

To Hannah, Mollie, and every wonderful guest, thank you for welcoming The Salty Fork into such a meaningful celebration. It was an honour to help bring your vision to life.

Until the next table is set, may every celebration be filled with great food, genuine laughter, and the kind of company that makes time stand still.

Life moves quickly.

Calendars fill, phones never seem to stop, and before long, entire days disappear into the quiet rush of everyday life.

Perhaps that's why sharing a meal feels so special.

For a little while, the world becomes wonderfully smaller. Conversations unfold without distraction. Laughter comes easily. Time slows, almost without anyone noticing. The only thing that matters is the company around the table and the simple joy of being present together.

The most memorable evenings are rarely defined by extravagance. They are found in lingering conversations, unhurried smiles, and those quiet moments between bites when no one feels the need to rush to the next thing.

There is a certain elegance in a table where everyone feels at ease.

Where a meal is never simply about what is served, but about the memories quietly created with every shared laugh, every thoughtful conversation, and every moment spent together.

Some evenings nourish far more than our appetite.

They remind us to slow down.

Some aromas have a remarkable way of stopping time.

As butter begins to foam in the pan, garlic slowly softens, and fresh rosemary and thyme release their unmistakable fragrance into the air, the room quietly changes. Conversations begin to drift toward the kitchen. Curious smiles appear. Guests instinctively pause, wondering what could possibly smell that good.

It's one of my favourite moments of the evening.

Long before the tenderloin ever reaches the plate, the experience has already begun. Every spoonful of herb butter serves a purpose—not simply to enrich the beef, but to build flavour one pass at a time, creating a deeply savoury crust while preserving a beautifully tender centre.

The final course should never feel rushed.

It should linger.

Served atop a silky coconut carrot purée with brown sugar roasted parsnips, finished with a rich pan jus, fresh microgreens, and delicate edible flowers, every element is carefully chosen to complement the next. Nothing competes. Everything belongs.

Because the final plate isn't meant to be the loudest course of the evening.

It's meant to be the one guests remember.

Long after the final bite has been enjoyed and the plates have been cleared, memories rarely begin with flavour alone. They begin with the unmistakable aroma of butter, garlic, and fresh herbs that quietly filled the room before the first plate was ever served.

Some meals satisfy an appetite.

The unforgettable ones leave behind a memory.

There is a question that quietly hangs over every table.

No one asks it aloud, but every chef can feel it.

As each plate is set down, conversations pause just long enough for wandering eyes to take in every detail. Forks remain resting on the table. Smiles appear. Someone leans in for a closer look. Another reaches for their phone. Around the room, a chorus of soft "wow" and "that looks incredible" begins to ripple from seat to seat.

It's a beautiful kind of anticipation.

Weeks of planning, hours of preparation, and hundreds of quiet decisions all lead to a single moment.

Then...

The first fork finally breaks the silence.

One bite.

Then another.

Before long, the room becomes wonderfully quiet not because the conversation has disappeared, but because everyone is lost in the experience unfolding on their plate.

As a chef, I never hope people remember every ingredient I used.

I hope they remember how they felt.

The excitement before the first bite.

The quiet that followed.

And the smiles that returned once everyone looked up from their plates, eager to share what they had just experienced together.

Because the most memorable courses are never just eaten.

They're anticipated, savoured, and shared.
