Sweet & Spicy Soy Ginger Beef with Sweetcorn Butter Rice & Cucumber Salad 💥🌽🥒

💥 Beef: Grated ginger, finely chopped chilli, extra dark soy sauce, sweet chilli, sriracha, sugar, msg

TOFU 101: EP 4 - CRISPY TOFU

We are moving into extra firm tofu & next up is how to get crispyyyy

My top tips:

- tear rather than cut
- flavour hack = broth seasoning
- cornflour, always over plain flour for a light and air coating
- optional but nooch for a savoury/umami hit
- a tiny sprinkle msg and sugar whilst it’s still hot

Korean-Inspired Crispy Pork Belly Rice Bowl 🥢🌶️

Ingredients ~

* 1 strip pork belly
* 1 tbsp salt
* Honest Umami Pure MSG
* 1 tbsp rice wine vinegar
* 2 tbsp gochujang paste
* 1 tbsp gochujang hot honey
* 1 tbsp sesame oil
* 1 tbsp soy sauce

- Score the pork belly skin, then rub the skin with the salt, MSG and rice wine vinegar. -Mix together the gochujang, hot honey, sesame oil, soy sauce and MSG, then rub generously all over the meat.
- Leave uncovered in the fridge for at least 1 hour to help dry out the skin.
- Cook at 160°C for around 2½ hours. Then turn the oven up to 240°C for 15–20 minutes to get the skin super crisp. - Drizzle lots more gochujang hot honey all over the crispy pork belly while it’s hot, giving you that spicy, sticky finish.

🥒 Cucumber Kimchi Salad

* 1 cucumber, finely sliced
* 2 spring onions, finely sliced
* A handful of kimchi, chopped
* Juice of 1 lime
* 1 tsp Honest Umami Pure MSG
* 1 tbsp soy sauce
* 1 tbsp sesame oil

- Mix everything together and leave to sit while the pork cooks.

- Slice the pork and serve over steamed rice with the cucumber kimchi salad. Finish with nori seaweed, sliced spring onion and sesame seeds

Buttery Anchovy, Garlic & Chilli Linguine 🌶️🍝

I promise, once you make this, you’ll become an anchovy lover 🤌🏻

Ingredients:
* 200g linguine
* 5 anchovy fillets
* 2 garlic cloves
* 1 fresh red chilli
* 1 tsp MSG
* 30g butter
* 2-3 slices of bread
* 1–2 tbsp olive oil
* Salt

Method:

1. Make the breadcrumbs ~ Blitz the bread into crumbs. Toss with olive oil, salt and MSG, then fry in a pan over medium heat until golden and crispy
2. Gently cook anchovies until melted
3. Add the garlic, chilli and MSG and cook until fragrant and sizzling
4. Add the butter and a splash of pasta water, emulsifying into a sauce
5. Add the linguine and keep tossing, adding more pasta water until glossy and consistency you want
6. Finish with lots of crispy breadcrumbs!

Fillet Steak, Green Garlic Butter 🥩🥩🥩

AD 🥙 I used a mix of my @ocadouk favs and newest finds to make the best sandwich to come out of Greece: the skepasti.

It’s basically gyro but between two pittas like a club sandwich, and the only medium in which both lettuce and cheese are acceptable toppings.

Coated my chicken in the @ottolenghi_at_home shawarma marinade, which I already had a jar of, and popped that into the oven on my Kebab Spike for a couple of hours. Used that time to snack on @helloblanconino_uk tortilla chips (again, already have a stash but I’m out of my favourite cool jalapeño).

For the skepasti, I popped my pitta under the grill with sliced mozzarella, added my chicken, lettuce, tomato, red onion, and a mix of @doctor_wills mayo and @diddlysquat.farmshop beer mustard on the top pitta.

No skepasti is complete without potato slices tossed in salt, dried oregano, and a bit of olive oil. Air fried for ~15 mins.

AD 🌯 Ok so hear me out, yes, I like a slow braised dish that tells the person (or people) you’ve made it for that you care.

But real life isn’t that accommodating so yes, I do have some quick win air fryer dinners up my sleeve too.

These chimichangas came together in under 45 mins.

For my chicken, I used an al pastor paste that’s been collecting dust in the cupboard for months, with a pinch of @honestumami chilli, zest and juice of a lime, and a drizzle of oil.

Popped those onto a tray and straight into my @haieruk i-Master 11L air fryer for about 20 minutes. Took them out, basted with @jdshothoney smoked chipotle, and got them back in on the Grill setting for ~7 mins.

Cut the chicken up, and loaded up in the new Mission Foods high fibre wraps (to compensate for the lack of black beans) with microwave Mexican rice, red pepper @holymolydips guac, pickled onion, candied jalapeños (recipe posted), and a drizzle of salsa verde.

Chimichangas are typically deep fried but these went back into my air fryer for <5 mins, and I served them with @helloblanconino_uk tortilla chips.
