Apparently, if the apocalypse is coming and we have to stock up on food that will last us a while, most of us don’t even know how to preserve a cucumber.

At least that was one of our discoveries at the salon we hosted on Friday: around 80% of the people in the room grew up in families that preserved food. Only around 5% knew how to do it themselves.

But let me go back to how we got here.

In January, on my birthday, my wonderful friend Ellie gifted me a series of jars of pickles, hoping one would finally resonate with my taste buds. I’d been complaining that I couldn’t find the perfect pickle in Vienna. Something that reminded me of my grandmother’s pickles, which, of course, is quite a lot to ask of a pickle.

As we tasted them, we started wondering: what actually makes the perfect pickle perfect? Is it the crunch? The saltiness? What is it?

Over the next weeks and months, the conversation kept coming back. Apparently, everyone was obsessing over pickles. So we thought, we should probably get people together and talk about this.

And somewhere in the planning, our search for the perfect pickle became a salon about the art of preservation.

On Friday, artist and chef @mafia_tabak, alongside a hunter Felix Drimmel, joined us to explore the history of preservation, how hunting has shaped the way we preserve food, and the role preservation plays in professional cooking. And, of course, to tell us what they think makes the perfect pickle.

I could not imagine a better partner to host this with than my gorgeous friend Ellie @hostedbyellie: an incredible creative director, a talented chef, and an absolute queen, for pouring so much love into this evening.

And a big thank you to our partner for the evening, @gurkerl_at, for helping us curate a very, very briny experience.

As for our survival instincts, we agreed there’s room for improvement.
